Notes: Mash: Add 2.04g of Calcium Chloride and 1.2g of Gypsum to water (3 gal) prior to heating. Mash at higher temp (160F) for better mouthfeel. Causes more dextrin in the mash. Pre-boil pH should be between 5.3 and 5.5.
Boil: Dissolve flour in small amount of warm water and add at 15 min. Post-boil pH should be between 5.0 and 5.2
Whirlpool: Chill wort to 170F and let hops steep for 20 minutes. Then chill wort as usual.
Primary: Add 0.68g of Calcium Chloride and 0.4g of Gypsum for every gallon of water that is needed to top to 5 gal in the primary.
Bottling: pH should be around between 4.2 and 4.6. |

Notes: Belle's Saison yeast. Alary Farms late season. 42% Golden Delicious, 50% Rome Beauty, 8% Staymen. Fermented November, 2014. Started tasting good around March 1st, 2015. First in AFC-15, EBC-15, NHC-first round San Diego.
Also split, used one lb/gallon pasteurized raspberries that won medals, and needs to be sweetened more than common cider. Raspberries too dominant, will reduce to 12 oz/gallon next time.

Notes: Using a 9L keg: Heat keg up with a boiling starsan water mix and drain. Add 1kg of either Dry spray malt extract or 1.1L of heated liquid malt extract (hot as you can get it). Add 1L of hot fresh boiling water to DSME or 2L of hot fresh boiling water to Liquid malt. Add hops, sugar and water treatment, yeast nutrient. Shake to mix. Let stand at near boiling temp for 5 mins. Longer if you want more bitterness. Top up water to 8L. Oxygenate. Allow to cool to fermenting temp. Add yeast. Seal keg. Shake, add spunding valve. Ferment as required.
You could add the hops to the boiling water prior to adding.
Ive used bottled water in this recipe.
Keg will need floating dip tube to OUT post.
ACTUAL METHOD USED.
Due to the dip tube rattling inside the keg I mixed and boiled the bottled water and malt extract in a sauce pan. First hops in the boil for 8 mins. Second hop in the keg prior to sealing at 15c. You could dry hop day 2 or 3 for biotransformation, whatever that is!!. Im nit very hopping so will go to 20psi.
Ferment, cold crash and serve from the keg as above.
7L of Carrick Glen Mineral water used.
Brewed on 20/09/22: Cooled overnight before adding final hops and yeast. Day 15 appeared to have finished fermenting. Crash cooled on 07/10/22 Day 17.
By 13/10/22 it had cleared on its own without any finings or getting, Day 23.
Excellent head, slight yellow colour. Distinctive strong Lime Aroma with Lime and sherbet type aroma. A bit sweet, slight toffee and sherbet flavour. A very nice beer for such minimum effort. Certainly will repeat.
Ive since done a shake and Brew IPA in 19L keg. Turned out 6.43% and had a very strong flavour with a slight, alcohol flavour. |

Notes: Tasting notes, 8-29-15:
L: Deep mahogany, with ruby edges. Large sandy head with good retention.
S: Spices and dark fruits. Hints of apple and cherry. Smells more like a Belgian dubbel than anything English.
T: Lots of dark fruit, followed by indeterminate spice notes. A faint oakiness in the finish, only a shadow of the oak and bourbon bomb that it was in May. Finishes with a wave of warm apple.
F: Brightly carbonated, thickening as it warms up.
O: I'm not sure what happened to this beer. The bourbon and oak are rapidly fading, and the resulting beer tastes, looks, and smells like a slightly toned down dark strong Belgian ale. It'll be interesting to see how it tastes in a couple more months. |

Ingredients
5 lbs. (2.3 kg) 2-row pale malt
2 lbs. (0.9 kg) rice syrup solids
2 AAU Domestic Hallertau hops (60 mins) (0.5 oz./14 g at 3.9% alpha acids)
2 AAU Domestic Hallertau (20 mins) (0.5 oz./14 g at 3.9% alpha acids)
White Labs WLP840 (American Pilsner) yeast
Step by Step
This is a step infusion mash. Target your water profile to be very soft water similar to Pilsen (~25 ppm HCO3-), utilize a larger portion RO or distilled water if your tap water is hard. Mix 7 qts. (6.6 L) strike water with the crushed grain to achieve a starting mash temp of 145 °F (63 °C) and hold for 120 mins. Raise mash temperature to 158 °F (70 °C) and hold for 10 mins. Raise mash temp to mash out at 168 °F (76 °C) and hold for 5 mins. Batch sparge with 170 °F (77 °C) water. Boil for 60 minutes, adding the hops as instructed. Target pitching rate at 2.0 million cells/ milliliter/degrees Plato (~2 L starter). Ferment at 52 °F (11 °C) for 3 weeks. Lager for 6 weeks at 32 °F (0 °C)
Extract option:
For extract, replace the 2-row with 2.5 lbs. (1.13 kg) light dry malt extract or 3 lbs. (1.4 kg) light liquid malt extract. Add extract and bring to a boil. Follow remainder of instructions for the all-grain version. |

Session cascade Amarican IPA styled in the manner of Japanese craft brew Yona Yona. Tasts somewhat malty due to excessive CaraRed used to impart colour.
Steep grains for 30 mins at 65-76C.
YONA YONA ALE Characteristics:
Yona Yona (“Night after night” in Japanese) pale ale is a medium-bodied American pale ale with a generous amount of cascade hops. Citrus flavor from premium Cascade hops and well-balanced bitterness and sweetness are its main character.

Zacieralem w ok. 3.5 l wody kranowki. Wyslodzilem ok. 2.5 l wody. Otrzymałem 4.5 l brzeczki o 9.3 P. Kolor mleka.
Otrzymalem prawie 11 l brzeczki o 15.1 P. Na powietrzylem blenderem i zadałem 6 łyżeczek drożdży. Temperatura 22C.

9:00 drożdże się namnozyly i są na dnie. Brak bulkania.
18:00 brak bulkania, drożdży na dnie nie widać Otworzyłem pokrywę i zobaczyłem, że utworzyły piękną czapę piany. Czyli gdzieś jest nieszczelność i gaz nie wychodzi przez rurkę. Ten fermentor ma niewielki ubytek na rancie, więc pewnie uchodzi tamtędy.
Od soboty dogrzewałem piwo przy kaloryferze. Max. temp. jaką osiągnęło to 26 C.

Wieczorem zmierzyłem ekstrakt. Wyszło 1.012, czyli 3.1 @ 21 st. C. Myślę, że w przypdaku już piwa nie można robić takich korekt temp. jak w przypadku brzeczki
