Heated 24L of adjusted water to strike temp
Strike water = 70C
Mash in temp = 66C
Mash pH low again! 5.1 despite only adding half the calculated acid (avangard pilsner malt?). Added a small amount of bicarbonate to correct the mash pH.
Approx 19L at 1.050. pH 5.30. Pitched decanted yeast starter at 17C.
Had in temp controlled fridge at 18C for 3 days before raising the temp to 21C.
Thursday 19th May 2016 (Day 9) - FG = 1.010. pH = 4.08. ABV = 5.25%.
CO2 transferred into DH keg with 100g Mosaic. Shook keg and bubbled CO2 through liquid out twice a day for 2 days.
Saturday 21st May (AM) - Started to crash DH keg.
Tuesday 7th June 2016 - Keg kicked.... |

Drew off 14l for a half batch at 11:10
First batch reached boil at 11:25
I split this batch into two halves. One was aroma hopped with 45g Mosaic and 20g Challenger; then dry hopped with a similar amount. The other was aroma and dry hopped with similar amounts of Citra, Centennial and Chinook. Note these were in batches of 12.5 litres so the hopping rates are massively high.
The first batch - Citra, Centennial and Chinook was undrinkable and the first batch I have ever had to throw away. Just way too bitter and too overpowering a hop flavour. It was like the brewdog barley wine but even hoppier. A slightly TCP/medicinal flavour. Just too much. I think the Chinook may have tipped it over the edge.
The 2nd batch - Mosaic, Northdown and Challenger - was right at the edge but drinkable.
Also, I didn't like WLP007 very much. It seemed to stop towards the end of the fermentation and I had to restart it by adding another starter. It was very flocculent and formed a putty-like sludge that was easy to harvest though - but I didn't want to keep it. |

Notes: Don't add candi sugar until flame out to prevent scorching. Use a hop spider to help dissolve this.
Beer came out exactly as the numbers given here. Probably due to me giving the mash a lot of attention.
Notes are - Plum, fig and raisin. Big toasty malt aromas. All of which translates into the flavour with a little mild spicy note from the coriander and Perle hops. I am really happy with this and will brew it again. |
