Notes: Steep Bob's Red Mill Mighty Tasty Hot Cereal at 150 - 160 degrees in 1.5 gal water for 30 minutes.
Bring water to boil, and add all primary ferment-able sugars, return to boil and achieve hot break.
Add hops, finings and other ingredients according to schedule.
Chill wort until appropriate temperature approximately 68 degrees, to pitch yeast.
Dry hop after racking to secondary.
Primary Ferment: 7 days at 68 degrees
Secondary Ferment: 7 days at 68 degrees

Notes: Split the vanilla bean, scrape out the seeds, and chop the casing. Add the paste and casing to a small jar and cover with vodka, about 1 ounce. Let this steep for one week. This is called a tincture. The alcohol extracts all the flavor from the vanilla bean for a more expressive profile in the beer.
If using vanilla extract: Use 2 ounces of pure vanilla extract per 5 gallons of beer. The extract will give you a nice vanilla profile but not as fresh and bright as the whole bean.
Adding pectin to the boil, in the form of apple puree, is a great hack to ensure your beer has a permanent haze and a thicker body. Core and peel 5 Granny Smith apples (per 5 gallons of beer) and puree in a food processor. Add the puree with 10 minutes of boil left.
Chill to yeast pitching temperature, 68F (Ferment at 68-70F)
Add first dry hop addition at high krausen, usually after 1 or 2 days
When signs of fermentation stop in the secondary fermentor, add the second dry hop, fruit puree, and vanilla bean tincture. Allow the fruit to fully ferment, at least 3 days.
Optional: If desired, swap flaked coconut in secondary with 2-3 drops of coconut extract per bottle |

Notes: L'ajout de houblon Chinook provient de houblons verts (de mon patio) dont j'en ai fait une teinture-mère. J'ai jeté 4 c à soupe de cet teinture dans le moût tiède, en même temps que la levure qui elle provient d'un levain conservé au frigo (levure allemande).
Le blé provient de 200 gramme de farine industrielle que j'ai mis dans le moût au tout début de l'ÉBULLITION.
La moité du plâtre a été mis dans la maiche lors de la conversion enzymatique et le reste dans le chaudron lors de l'ébullition
J'ai mesure au moins 7% d'alcool avec le densimètre.
La couleur de la robe correspond à celle affichée sur cette fiche (en haut à gauche).
Mise en tourie le 16 octobre. -La bière s'annonce très bonne. Des notes de fruits tropicaux sont décelables au nez (bananes, ananas). En bouche: abricot, bananes, épices. Le chinook est à peine perceptible mais donne une touche spéciale (non astringente) à l'ensemble. -J'ai ajouté 3 gouttes de MgCl à la bière en tourie.
Environ 14 litres prévue (moins 1 que j'ai consommé précédemment).
23 octobre: embouteillage: 12 litres de très bonne bière, très bien équilibrée et houblonnée avec une belle mousse onctueuse.
J'aurais probablement 14 litres de bière si je n'en avais bu (précocement) avant ;)
J'ai ajouté 3-4 gouttes de MgCl dans la bière avant l'embouteillage et j'ai ajouté 110 g de dextrose en plus d'avoir bien agité la bière (avant l'embouteillage)

Notes: Bring 6lbs of frozen strawberries with pectin added to a boil.
Pectin is added to prevent chill haze.
Shutdown boil after 1 minute.
Cool pot rapidly to room temperature..
Add equal volume of water and honey.
Cooked honey at 160 Degrees for 30 Minutes. Cool pot rapidly.
combine strawberries, homogenized honey, and other ingredients. Sprinkled yeast on top of fermentables.
Add Fermaid K after 3 days to boost fermentation.
Rack to secondary fermenter after 5 Days.
Continue with fermentation until it ceases.
Verify final gravity with hygrometer.
Opti-White added for mouthfeel and protein stability.
FT Blanc Soft is a white wine tannin. Protects against oxidation.
Use both of these in meads and ciders.

Unusual brew day, as we made an error with heating the mash, so we ended up having the beer at almost 162 F, way out of what we wanted! We hope that it doesn't ruin the beer.
At 60, 152 F
At 51, 151.7 F
At 30, it was 162!!! Because we put it on the burner.
PH of 5.4 for the Mash
PH 5.52 for the sparge water
BF predicted 5.5 while Braun Water predicted 5.25. But I did add a bit more water due to the overheating issue, so in practice it looks like they're right in between.
Note that the water report says it is too bitter based on the water profile. I should think about adding CaCL next time.
OG: 1.046
14.11.18 Saw something weird floating in the beer... I tried the beer it tasted strange I need to do a fuller tasting tomorrow to see if it'll be okay.
15.11.18 Dry hopped with Belma, Galaxy, and Citra. Tasted the beer, a bit maltier on the tongue than should be the case. But it could be salvage-able. |

25L went into Boil - needed to topped up to 23L post-boil
Yeast hydrated in 10x weight kettle water + 1tsp dextrose. Pitched @ 23.7C. OG 1.060 @ 23.7 = 1.061!
Fermented 9 days in Primary, racked to secondary, dry hopped 7 days, bottled, 2.5xCO2 (145g @ 20L @ 20.4C)
