| Notes: Thought we'd brew a single NEIPA but it came out a 7.5 double. OSG 1.067 fsg 1.010. Day 1 4 ounces of each day 3 4 ounces of each. Beer is delicious. Soo good. Big melon, pineapple and bubblegum. Coastal Haze and London ale 3 starter. Great combination of hops, who would have thought. |

Shitty packaging, i hope they are still good. Simcoe smells nice but Ekuanot doesn't have a whole lot of aroma.
Azacca smells awesome!
Efficiency came out low, so OG was low. 1.055 ish.
Taste was good, insanely hoppy. Not special though. A bit vegetal from the massive whirlpool hopping. The Kveik fermented hot at 37C gave a massive orange rind taste to the beer that was a bit too much. FG ended up 1.015.

| Notes: I chose a Gose for a nice smooth sour that can be drank anytime of the year. The grain i used was a 50/50 blend of pilsner and wheat. this is a very easy and traditional grain bill. I was not looking for anything from the grain to stand out anyways so i wanted it simple. The mash water to grist ratio is pretty high because i dint want a stuck mash with all the wheat. I also added lactic acid to the mash water to lower the pH to 5.4. The hops i used are not very traditional but i wanted the orange flavor from the hops to match well with the coriander and salt. The hops only have 15 IBU we shouldnt get much of aroma or flovor since they are added in the beginning. I am adding corpse ground coriander and salt to the last 10 min of the boil for a traditional gose flavor. I am fermenting with a german ale yeast and souring with a lacto brevis since it is hop resistant. |

Followed hop schedule and last ten minutes, I added .75# lactose sugar, whirlflac tablet, dextrose and 5 tsp yeast nutrient
OG Reading 1.068
Once boil was over I added orange peels in starsan straight into sanitized fast fermenter.
Began chilling wort to 80 degrees using recirculating arm and chiller.
Transferred wort with pump into fast ferment and aerated with o2 tank for 45 seconds.
Pitched yeast at 10:15 pm - Set temp controller to 90 degrees
Ended up with 5.6 Gallons into fermenter.
Put to rest in with heater and blow off tube.
Fermenting at 82 degrees f
Dec 31, 2019 - 9:30 am - added .5 once natural vanilla and coconut extract, 1oz citra dry hop in muslin bag after dumping first sediment ball. SG 1.015
Jan 4, 2020 - Transfered to fermonster and began cold crashing at 34.
Jan 5, 2020 - 6 pm - Added Gelatin.
OG 1.068 TO FG 1.012 - 7.35% ABV
Jan 11, 2020 - 7 PM - Transferred to keg and set to 30 PSI for next 48 hours.
