Notes: I added HLT water to the boil @ 0 min to lower the SG into the fermentor. 7.15% is a bit too high of an ABV than I was looking for in the final product. I went into the fermentor @ 1.067. I have been finishing a bit shy of the target FG so I am hoping this brew will finish @ 6.25-6.5%
Added the Mulling spices (Bitter Orange, cove, star anis, cinnamon stick and mull berries) to the hop spider in whirlpool for 10 minutes. the aroma cam across instantly.
POST BREW: its too dark, I'd eliminate the Carafa Special Type-III. |

| Notes: Gonna dump a fresh batch of wort on top of my "Constable McGrath" dregs. in my Speidel 60 liter fermenter. Gonna add a bag of Hornindal and a dry Safale Brett to give enough cells and see how it turns out. This is an effort to replicate what I have garnered to be traditional tavern brewing whereby the brewer would never think of wasting materials or positive inertia when continuing a particularly great beer, Will let you know!! Kinda like the 40 year stewpot.....just add more carrots!!! LOL!! PS I am going to tone down the hops because there will be some IBUs in the barm.... |
