Notes: Mash Steps
1 Bring 4.9 gallons Of water to 170.7 degrees.
2 Gradually stir in water and grain, cap cooler, and let rest for 60 mins. at 152 degrees.
3 Bring 2.0 gallons of mashout water to boiling, and bring 2.8 gallons of sparge water to 170 degrees.
4 Mashout: After 60 minute mash, add boiling water to mash, stir, and let sit 5 mintues to raise temp and free sugars from husks.
5 Recirculate about one-half gallon over the top of foil (to avoid agitating) on grainbed, or until wort fairly clear.
6 Drain mash tun contents into the kettle.
7 Sparge: Close mash tun valve, add sparge water, stir and let sit for 5 minutes.
8 Recirculate about one-half gallon over the top of foil (to avoid agitating) on grainbed and then drain until boil volume of 7 gallons is reached.
Leave hop bag in while cooling. |

Notes: Mash at 153°F (67.2°C) for 30 minutes targeting a pH of 5.3, then mash out to 165°F (74°C).
Cast out to 66°F (19°C). Ferment at 68°F (20°C).
Dry hop with the 50/50 mix of Citra and Chinook at the end of fermentation. Transfer off of the hops and yeast at day 11.
We target an 8:1 sulfate-to-chloride ratio for our hoppy beers. Use a moderate amount of gypsum, calcium chloride, and Epsom salts to Burtonize your water. You might try 4 g gypsum, 0.5–0.65 g calcium chloride, and 0.25 g Epsom salt as a starting point. |

Notes: Going to do pull half this batch through a CFC after 60 minute boil and ferment with US05 / 1056. Plan to add raspberry to fermenter after 4-5 days of fermentation to avoid major blowoff but help with biotransformation during active ferment.
Other half is going on a Bootleg biology saison yeast cake. Tons of citrus / NZ hops will be added to kettle to steep after top half is drawn off. Will be dry hopped as well. I will add a quart of sorghum syrup made from local harvest. Will get a gallon at 1.080 spec gravity and condense it down before adding to give a small amount of caramel. |
