Notes: Spruce tips (in a muslin bag) created like a spruce tea. Don't boil or they get bitter. 180F to extract as much flavor as possible, remove the bag and then simmer to reduce. I added my gelatin finings to this then directly to the keg.
Smoking your own malt...
I have a Masterbuilt Smoker I thought I could control the temperature on fairly well. Realizing temps above 170F would affect the ability of the malt to convert starches to sugar, I struggled. I eventually left it rise to over 190F and just added more malt in the end and added some more cherrywood smoked malt to make up. Next time I'll just cold smoke it for maybe two hours. |

Add 500g toasted coconut flakes to the 2nd fermenter after primary fermentation for 2 to 7 days (to taste) - I target 7 days, (see 2022 notes.)
Honey was Rich and Dark from Asda, 340g size, new for 2023 added to secondary fermentation along with coconut to reduce honey taste off-gassing
Aiming for honey notes and coconut = Gorse flowers
Hops see 2022 notes.
At bottling looks to be very pale, very coconut and very rich - Should be a bit special.
Tasting - Wow, coconut with rich malt finish, warming and full bodied. Bitter enough not to be cloying. |

Ferment at 21 degrees
Instructions
1. Fill 29 litres of water into your brewing kettle and add your water treatmen
2. Heat to a few degrees above your mash temperature as the temp will drop when you add the malt
3. Mash at 67 degrees for 60 minutes
4. Sparge after Mash to achieve pre boil volume of 28.5 litres (check gravity 1046)
5. Boil for 60 minute
6. Add Hops as per hop schedule at 45 mins, 30 mins, 15 mins, 0 min
7. Add Whirlfloc Tablet 10mins before the end of the boil
8. Cool after boil to 21 degrees and pitch the yeast (aiming for SG 1046)8. Ferment at a steady temperature
9. Dry Hop on day 3 90g
10. Dry Hop on day 6 90g
11. Check for final gravity of 1012
12. Package in bottles or kegs as normal
