Notes: Tasting notes, 8-29-15:
L: Deep mahogany, with ruby edges. Large sandy head with good retention.
S: Spices and dark fruits. Hints of apple and cherry. Smells more like a Belgian dubbel than anything English.
T: Lots of dark fruit, followed by indeterminate spice notes. A faint oakiness in the finish, only a shadow of the oak and bourbon bomb that it was in May. Finishes with a wave of warm apple.
F: Brightly carbonated, thickening as it warms up.
O: I'm not sure what happened to this beer. The bourbon and oak are rapidly fading, and the resulting beer tastes, looks, and smells like a slightly toned down dark strong Belgian ale. It'll be interesting to see how it tastes in a couple more months. |

Notes: 1. Steeping @155F in ~10L water, rinse with 4L of >170F water
- Rye for 45min
- others for 30min
2. Boil, full 5.5 gallon to start
- add LME
- add bittering hops 5mins after boil is re-achieved
- add chiller and spoon to wort with 15 mins left
3. Flameout
- chill down to ~180F
- Add "Whirlpool hops"
- attempt to hold temp for 30-45 mins, while ideally stirring a bit
4. Chill
- all the way down
5. Transfer to fermenter, check volume and top-off as needed. Take OG. Aerate.
6. Pitch yeast... no f-ing starter.
7. Dry hop, as indicated... or some amount of days TBD. |

Notes: Spread pumpkin puree on baking sheet, cover with 8 oz brown sugar, bake at 350 for 30 minutes. Store in oven until wort is being chilled. Force through funnel in to carboy as wort is chilling. Syphon wort on top. Oh, add 1 tsp each ginger, cinnamon, and nutmeg at 5 minutes minutes of boil. Add one cinnamon stick to secondary. |

Notes: This Brew uses a reverse hop method it really screws with calculators and they wont give you a an accurate reading of bitterness but the beer turns out great. At the end of the boil add your Aroma hops and whirlpool. Let your kettle settle for about 15 min before cooling. When your fermentation starts to slow crush your dry hops to a powder and stir in. This is a great tasting beer I give it a 3 out of 4 stars and the girls can't seem to get enough of it. |
