1.29 gallons honey (25%)
3 packages Lavlin 71B yeast - White wine yeast. Ferment at 62. Allow up to a 4 degree gain in temp during primary fermentation. Don't go too hot or you'll get fusel alcohols.
I'm using wildflower honey because it's what I have available. Hopefully the spices and apples will cover the muddled honey. I tasted the honey before buying. I liked the honey, but I can’t recall tasting a honey I didn’t like.
Process:
Warm honey to lukewarm temp so it's easier to pour. Add 1.5 gallons of must to carboy. Use 2 gallons of must to dissolve honey. Pour mixture into carboy. Rinse containers with remaining 0.5 gallon of must. Add 6 crushed campden tablets to must. Wait 24-48 hours to aerate must and pitch yeast. After a few hours, check gravity. It takes a few hours for fruit gravity to stabilize.
Pitching process:
It is important to follow these steps in order. Mix together 1/2 cup warm water with GoFerm addition at 104 F (lukewarm). Slowly mix in yeast. Then slowly add must to mixture until temp is within 10 F of must. Aerate must with pure O2. Use a slightly longer aeration duration due to the higher gravity and lower solubility of O2 into the must. Pitch GoFerm/yeast/must/water mixture. Pitch pectic enzyme. Aerate again at 12 hours with pure o2
Yeast nutrient process: Stagger yeast nutrients every 24 hours for the first 3 days and at day 7. Use 4 grams nutrient for each addition. May want to rehydrate nutrients before adding to the must. Otherwise it will create a nucleation point and the co2 could cause foam to spill.
PH: monitor the pH daily and add a tsp. of potassium bicarbonate (more if needed) if the pH drops below 3.5.
De-gas process: degas twice a day during primary fermentation (4 - 5 days). Use a wine whip or something similar.
Secondary process: Rack to secondary at 3 weeks. Monitor gravity periodically. When gravity has reached terminal, add spices(See "Spice process".) Wait until desired flavor has been achieved then rack again. Add super kleer, wait for mead to clear up then add potassium metabisulfite for it's antioxidant properties.
Spice process: Add spices after racking to secondary. High quality cinnamon and vanilla is super important. Michael Fairbrother recommends Madagascar bourbon vanilla beans and Vietnamese (saigon) cinnamon. This is real cinnamon. Michael doesn't give amounts so I'm starting light. Start with 1 bean and 1/4 tsp cinnamon, add more to taste.

| Notes: Preheat oven to 350°F (177°C). Chop the carrots into chunks and roast with about a cup (237 ml) of water until the carrots are soft and starting to caramelize. Remove from oven. Add the water with carrot juice to the boil kettle at the beginning of the boil. Put the carrots in one fine mesh bag and the dried leaves in another fine mesh bag before adding them to the boil. |

| Notes: Boil 75 minutes . Shut off the heat and add whirlfloc. Start adding super heated rocks from a hardwood fire to keep a boil going. Add the cooled rocks to primary fermenter. D rest @ about 10 days. (65 degrees for 3 days) cool back off to 52 degrees. Rack to secondary after 2 to 3 weeks primary and slowly lower temp to 38 degrees and lager for a month or more. |

Første brygg som meskes med falsk bunn. Jeg hadde 3,5 kg malt og 12,5 liter vann. Ratio 3,5 / 1. Det ble en litt tjukk mesk, så neste gang vil jeg prøve enda mer vann. Jeg resirkulerte alt meskevannet en gang, og tappet deretter ut vørteren i diverse kjeler. Så tilsatte jeg 7 liter skyllevann på 78 grader. Men temperaturen ble ikke mer enn 70 ettersom kornet senket temperaturen. Lot kornet trekke i dette i 5-10 minutter før jeg tappet det ut. Neste gang vil jeg tappe ut i et gjæringskar så jeg slipper å åpne og stenge krana så mye. Det ga litt søling og dårligere avrenning på slutten. Jeg lot vørteren renne gjennom humlefilteret, for noe korn kom gjennom den falske bunnen.
Jeg tilsatte altså 12,5 + 7 liter vann, men da vørteren var tilbake i kjelen hadde bare ca 13 liter. Så 3,5 kg korn tok altså med seg ca 6,5 liter væske.
Rensing av kjelen for korn var også litt mer tungvindt enn ønskelig. Jeg mesket på 68 grader og tapte max 1 grad etter 60 minutter.
Jeg brukte litt gamle humler. Chinook-posen var åpnet for et år siden, og cascade-posen for tre (!) år siden.
Gjæring på 18-20 grader i to uker, deretter ca 22 grader i 2-3 dager, deretter 10 grader fram til flasking 8. desember. Siste uka var ventilen ned til kolben med gjær stengt. Flasking gikk greit, rørte forsiktig inn 6 gram sukker pr liter. Karbonerte på 20 grader fra 8. desember til |

Recipe adjusted for bottling i.e. OG left 5 points below required to allow for extra provided by bottling sugar. Same applies to ABV - adjusted for extra 0.5% at bottling.
Briess Golden Light or Amber (if amber no need for crystal grains) - (if crystal needed add 75gms of 60 Lovibond) .
Liquid malt dissolved in fermenter with 1 litre of boiling water.
0 minutes hops added in portions every 5 minutes and 5 degrees of total 20-25 minute hopstand starting at 90c. Ice may be needed to reduce temp by 5 degrees at each stage of hop additions - last addition at 70c.
Increased 0 minute addition due to Throwback IPA recipe tasting quite light in hop flavor - add largest portions at 80c, 75c and 70c to add flavor and avoid actual increase in IBUs.
Yeast also changed to US-05 as Notty seemed to strip hop flavor from Throwback recipe.
In fermenter 10 Jan. OG check showed it low at 1034 but may have been poorly mixed wort. 1015 on 14th. Dry hopped 14th.
OG checked 4 days apart and staying at 1015 - equates to very poor attenuation from S-05 (65%)- expect my calcs were wrong somewhere or PPG for malto is too low.
