Notes: 12/23/21-Sulfited and bottled (still) using the keg/CO2 system.
4/19/2020-2nd try at mead. Ended at .996, so this is actually 14.96%. I added K-Meta and K-Sorbate at the racking, 5/17/2020. I may back sweeten, but I am planning on carbonating the batch, after aging.
This will be fed using the AIH Traditional Mead Additive Kit. I am using the feeding schedule I have seen on the AHA website-which matches the kit from AIH.
DAY 1: Add honey to 110F water and KMETA (Pack #1). Mix thoroughly, let rest one day.
DAY 2: Temper yeast with Goferm (Pack #2) add to must and pitch. Add 1/2oz. Medium Toast Oak Cubes.
DAY 3: Feed with Pack #3. Degas, 60 stirs.
DAY 4: Degas, 60 stirs.
DAY 5: Feed with Pack #4, Degas with 60 Stirs.
DAY 6: Degas, 60 stirs.

Notes: The last attempt of this recipe was really good, so as usual I'll have to throw a spanner in the works and try to mix it up a bit.
Instead of wheat malt, I subbed in Triticale Malt which apparently is like a characterful wheat malt (we'll see!) and instead of doing a kettle sour, I'm trying the Phiily Sour yeast that creates lactic acid during fermentation.
Mashing low to try and get more glucose in the wort to make the Philly Sour produce more sourness.
I'm also trying to see if a 30 min mash and boil still makes a good beer.
Update: It was way too sour at the low mash temp (64) so I put two small cans (400g each) of tinned apricots and a small tin of apricot nectar after the cold crash and let it sit for a day or two before racking into the keg. I don't normally like sweet beers but it turned out really good. |

Notes: -37 liters took 45 minute to reach a boil. Going to boil off for 1 hour, then we will add the first set of hops of Citra for 15 grams for 60 minute boil.
-So we used 37 liters of water with 7 kilos total of malt. 6 kilos of pale ale malt and 1 liter of caramel amber malt. Waiting for boil, we want to boil of 10 liters. So boil for 120 minutes down to 27 liters, wait until 60 minutes after to add hops.
-The OG was 1.044, that was too low. We used just under 2 kilos of sugar to take up the OG. Took that up to 1.058, hopefully will end with a 1.016 FG, then we will have a 5.6 ABV... No more dry hoping this round.
2nd time - 1.070 OG, so hoping for 1.020 FG = 6.8 ABV, not too bad. Letting ferment for 7 days then going to dry hop for 5 days with 20g of Amirrilo and 30g of Citra. Total of 50g of hops, so the first hop of bitters is only 10% of the entire hop bill. The FG was 1.020 so an ABV of 6.8%, figure 7.0% after 2nd fermentation. Very excited about this beer.
I went way to heavy on the malt with 11.5 kilos, taking it down to 8.0 kilos. They body of it was just too thick. Going to keep the hops the same. |
