Notes: An attempt at cloning https://www.wychwood.co.uk/beers/hobgoblin-ruby/. Targeting 4.5%, which is cask/draft Ruby (bottled Ruby is 5.2%)
Based on, among other things, "Hobgoblin Dark Ale clone" from "Chocolate Malt" (https://byo.com/article/chocolate-malt/).
Not sure if Hobgoblin Ruby is an Irish Red or English Brown, so pick something in the middle. The "Matches styles" section of this recipe hits both.
BU/GU for Irish Red = 0.43
Northern English Brown: 0.54
Southern English Brown: 0.43
Acceptable hops are Fuggles (preferred @ 60mins, 4.4 AAUs), Willamette, East Kent Goldings, Goldings (US), and Styrian Goldings (preferred @ late, 5.5 AAUs). |

Notes: Created two separate 5 gallon batches with single grist / mash and single boil kettle (used same hops and seasoning schedule)
1) Boiled first 6.5 gallons for 10 minutes - no additions
- cooled to 120 degrees, added lactic acid to get pH to ~4.5
- transferred to bucket fermentor, pitched ~1/2 Goodbelly probiotic drink (at temp < 115 degrees)
- wrapped in blankets/towels - 12 hours still at 90 degrees
- check pH, proceed with normal brew process (boil) once desired sourness achieved
- followed hop & seasoning schedule (but half of hops shown - 1 ounce total)
- pitched White Labs - San Diego Super Yeast
- salt to taste
2) Boiled second 6.5 gallon batch following hop & seasoning schedule above (half of hops shown - 1 ounce total)

Very happy with results-if you like rhubarb you'll love this. More rhubarb than strawberry flavor, some nice strawberry aroma. Exactly what I was going for. I plan to make again with 50/50 fruit ratio just to see if get a bit more strawberry.
