Notes: Original recipe called for S-23, but my LBS did not have it, so he recommended I change to the Diamond.
He also recommended a do a diacetyl rest since this ferments at 52 degrees. LBS also suggested that I do 1/3 of hops at 60 minutes & remainder at 15 minutes vs 50/50. Felt like that would balance out the IBUs more. I am too new at this to debate that with him!

Notes: A good transition beer for those individuals used to easy-drinking American styles. This beer has the same bitterness levels (low) as American beers, but is an all-malt product,

- Add all steeping grains to steeping bag and steep as per your
preferred steeping method. Generally, 150*-160* F for 30
minutes.
- Remove grains, (sparge with 8 Oz. of 170*F water) bring to boil
then turn off heat, and add extract. Once extract is amply mixed,
bring back to a boil.
- Once water comes to a boil, add bittering hops and start the 60
minute clock. Follow schedule for hops addition.
- After flame out cool wort to 75*-80*F*, transfer to fermenter &
add cool/cold water to bring total volume to 4.25 gals. ( the
addition of cool water should bring Temp down to pitching Temp
68* F.
- After Fermentation.... let sit on trub for 3-5 days then bottle.
- Add 1 Sugar Fizz Drop per 12 oz bottle when bottling.
- Condition in bottle for 4-5 weeks, timing is somewhat flexiable. |

Pre boil gravity 1.032
Whirlpool hops at 180* Chiller worked Real fast. Less than one gallon pumped through and wort temp dropped to 170. Fired burner again to get to 180. After 10min temp down to 165. Fired burner again on low for remainder of whirlpool. Hops out after 20min @ 175*. Chiller back on and cooled to 76*. Added 1/2gal wort to fermenter and then direct pitched WLP067 yeast and filled rest of fermenter.
4.9 gallons total with OG 1.041
Initially set temp @ 72. Dropped to 67 after 5 hrs.
30hrs after yeast pitch, Dry hopped and increased temp to 70*.
Dry hops out 3 days later. With gravity reading of 1.010.
