Kettle soured to pH 3.44
Pitched US-05 but it seemed to stall so added some T-58.
After about 8 days fermenting gravity was 1.014 so racked onto 1kg blueberries with some pectolase.
Liquorice taste is there but has mainly been used for the slick mouthfeel it gives. 60g was about right, I may add more near bottling by making an extract. |

Notes: Chipotle to be sliced lengthways up to the stalk and seeds left in tact: the aim is to expose as much of the chilli as possible. Mangos to de-skinned and then cubed, again aiming to create good exposure .
Chipotle and mangos to be sanitised in vodka for a minimum of 8 hours before the vodka is strained away and the chipotle and mango added to a sanitised muslin bag, add then to the FV. Leave for potential secondary fermentation arising from the fruit sugars for another 5 days before gravity check then racking. |

Notes: 1.5 Tbps pumpkin pie spice @ 5 min remaining in boil
2019 Batch - Spices came out harsh and bitter. Good after 4-6 weeks in bottle. Use a tincture next year. Pumpkin not really noticeable. Consider adding vanilla bean. |
