4.9 kg Pilsner malt (75 % of malt)
1.6 kg wood smoked malt (25 %)
10–12 liters of juniper branches, or 2–4 liters of spruce or fir tips
20–40 g of medium-alpha hops for 10 IBU (hop tea)
Kveik or ale yeast
Make an infusion from the juniper branches, spruce tips or fir tips with enough water for the mash. Let the branches or tips infuse for 2–3 hours. Before mashing in, heat the infusion high enough to arrive at a mash temperature of 66–68°C (151–154°F). Keep the mash at this temperature for 45 minutes.
Once you have mashed in, add more hot water onto the spent branches or tips to make an infusion for sparging. At this point, prepare the hop tea: Boil the hops in a small amount of water for one hour, and then dump the whole tea into the mash. Use around one liter of water per 30 grams of hops (quart per ounce). Note: this method gives roughly half of the bitterness of a typical wort boil.
Raise the mash to 70–72°C (158–162°F), and hold at this temperature for half an hour. Then raise to 75–78°C (167–172°F) for the final 30 minutes. Begin lautering, and recirculate until the wort runs clear. Sparge with 75–78°C (167–172°F) juniper infusion until 20 liters is collected. |

Notes: Dropped a tea spoon of slurry of kveik from a previous batch into 34C Wort - Fermentation kicked off in less than 2 hours.
After 12 hours I noticed the spunding valve had opened up at around 15PSI - I dropped it off down to around 8-10psi for the rest of fermentation.
After about 36hours fermentation had started to slow - I dry hopped my first dry hop here and let fermentation finish. - Finished around 48 - 60 hours - Left it for another day before cold crashing for 2 days.
Close loop transfered into a keg that had been purged and had 2nd dry hop bag already suspended.
Carbed at 30psi for 2 days and dropped it down to serving pressure. |

Notes: 4 ml HopShot hops extract at 60 minutes
Add gypsum (calcium sulfate) to taste depending on your local water source. Mash 50 minutes at 150°F (66°C). Vorlauf (collect first runnings) until the wort runs clear. Collect 6.5 gallons (24.6 liters) and boil for 60 minutes. Add yeast nutrient at 10 minutes. Target 1.065 specific gravity. Chill to 70°F (21°C). Pitch healthy American ale yeast. Ferment at 66°F (19°C) and turn off the temperature control as fermentation vigor slows. Once desired gravity is reached, rest for a few days and dry hop for 4–6 days. Rack to a corny keg and force carbonate at 38°F (3°C) for two weeks.

Notes: Update 7/22/2019 :
I'm changing the yeast attenuation on this because I just measured the FG as being pretty much 1.002. Need to re-evaluate procedures. Possibly overpitching yeast (NO) or mashing too long / not mashing out properly, plus should start adding some crystal malt in there. On the other hand, if so desired - the beer is probably closer to 9% so it would be nice to hit the correct abv but the beer is good, thin bodied, but not as dry as i would expect given what i just found out. perhaps for dipa and tripa this is fine. for my stouts though not so much.
Update 6/10/19 :
rebrewing the "I got nothing" grain yeast and all, this time using one pound of columbus hops for the brew. will do 4 oz regular dry hop and put the other 4oz suspended in the keg.

I accidentally added the wheat to another beer. Thewheat planned for this didnt make it in. Boosting up the corn sugar to 1lb to make up some abv.
update 2/12/19:
changing this for sort of a west coast double ipa spin off. the first beer was pretty good, good hop flavor and bitterness, good everyday beer. this one would be more of a west coast style hop bomb. also going for clear beer (both in appearance and body) this time so axed the oats and london yeast in leui of corn sugar and american ale yeast (may use american ale ii since i have some). will need to cold crash properly as well. also thinking of a different spin off of this in NEIPA style, should be elsewhere in the archives....

kinda made up on brew night.
C5 hop is a combo of cascade centennial citra columbus and chinook. i had more on hand of cascade and centennial so i did 1.2 centennial and 1.3 cascade , 1oz everything else for a total of 6 oz used. calculated the weighted average of the AA, hopefully that checks out.
using reused london ale yeast from a previous batch amber lamps. the yeast was never taken out of the fermentor. (taking half of the yeast to use on a barleywine im also brewing tonight) |
