Notes: Getting rid of the last of my grains, so using at least a bit of everything I have on hand (except golden naked oat- nobody needs that shit), as well as lots of different hops. So put it all together, and you get a Black IPA. More crystal malts than I'd normally use in a modern IPA, so adding the sugar, and lower mash temp, to dry it out a bit.
Because of all the different crystal malts, I’m mashing all my dark grains (compared to mash capping; I want the extra bitterness to balance the extra sweetness).
This will be 2.5 finished gallons into keg. Expecting 0.25 gallon loss to both trub and hot side hops, and maybe 0.15 gallon loss to dry hops. So want 2.9 gallons into fermenter. I lose 0.6 gallons during the 60 min boil, so start boil with 3.75 gallons. Will lose about 0.35 gallons to grain absorption in BIAB mash, so total water needed will be 4.1 gallons. Use 2.75 gallons in mash, and 1.35 in sparge.
Might split the dry hops and do two rounds. |

Notes: Net 4.0 lbs of Roasted Butternut Squash
- top with 8 oz of Pilloncillo (Mexican) Dark Brown Cane Sugar
- roast for 90 minutes at 375°
- scoop out roasted squash flesh w/sugar topping and toss the skins
- puree the squash mixture and add to kettle at beginning of 60 minute boil using fine mesh hop bag.
Spice mixture: added at 5 minutes remaining in 60-minute boil
5 tsp. cinnamon (ground)
1 tsp. nutmeg (ground)
1 tsp. ginger (ground)
1 Tbsp. Vanilla added to fermenter 3 days before kegging
Doing an OPEN-ish fermentation (to avoid possible stalling that can happen with this particular Dupont strain of yeast). Will remove airlock from the fermentor and loosely cover with foil. Fermentor will be inside a small chest freezer with lid closed to maintain warm fermentaion temperature. |

Notes: Version #1Started Ferm at 62ºF, rehydrated Safale 04 in Santo Domingo tap water, activity at about 15 hours. Dry hopped 5 days after pitch, reduced airlock activity. Bottled exactly 5 gallons, primed with 5oz corn sugar. Brewed 3/13/21, bottled 3/31/21.
After about 2 weeks in bottle-- great-- lots of foam on the pour but fine foam and Belgian lacing. Great aroma-- maybe the Vic Secret? Would repeat recipe little less carbonation maybe. (Bottle conditions at about 82º F Santo Domingo.

Notes: Add.5 oz of unsweetened cocoa powder at the end of boil.
Make a cold brew coffee with cocoa nibs and add to taste before kegging (appx-1 0z of coffee and 3-4 oz cocoa nibs)
(Using 1:6 ratio, therefore 4oz of coffee + nibs would need 24oz water)
Tasted 12/26/19-Chocolate and coffee notes. Would add lactose and roasted barley for more creamy and sweetness.
Brewed 12/8/19
1. Used MIAB. Temp dropped 6 degrees in mash. For a 154 mash should of started closer to 165.
2. End of mash 10.5 Brix (1.042). pH=5.05
3. After squeezing bag got 4.5 gal.
4. 90 minute boil. OG=15 Brix (1.061)
5. A little over 3 Gal into the fermentor. |
