Notes: Full volume mash. No sparge. Recirculated wort during mashout. Added BrewTan-B to mash water and just before flameout. Did an SNS yeast starter with one pack of WLP840 and two vials of frozen/banked WLP840. The banked WLP840 was tested in a small starter to confirm viability. Fermented in 48-52* garage.
Excellent beer. 1.25oz of Liberty hops was a bit too much for the style as a WP addition. The Sugar Creek malt addition also added some body/complexity which was nice but probably a better fit in a pre-pro pils. |

Notes: Infuse to 152F, hold 30 min, infuse boiling water to 158F, hold 30 min, infuse 185F and recirculate, collect. At flameout begin pump driven chilled (counterflow & immersion) whirlpool for 15 min. When reaches 72F collect to fermenters (66F). Ferment at 66F for 3 days, rack to 2ndary, continue fermenting till SG stalls. Cold crash and lager. |

Notes: Base recipe modified from various recipes for Fuller's London Porter. Originals were 76% pale, 12% brown, 10% crystal, 2% choc; or 70 pale, 14 brown, 9 crystal, 7 choc.
IBU target of original was 33. ABV 5.2%
Coconut needs to be lightly toasted and then brushed or rubbed with paper towel to remove some of the oil that will probably seep out. Lactose should be boiled with some water. Both should be added to primary fermenter after yeast has been dumped (hook up CO2 to minimise air introduction during this step). Purge coconut with CO2 before adding.
Fermentation profile should be controlled at 20 throughout primary and secondary. Wait until FG has been reached before chilling, then fining. Chill slowly over 3 days if possible. |
