Notes: Mill the grains and mash at 156°F for 30 minutes. Sparge the grains with 170°F water and top up as necessary to obtain 6.5 gallons of wort—or more, depending on your evaporation rate.
Boil for 60 minutes and whirlpool. When the wort has cooled to 170°F, begin adding the whirlpool hops and add them intermittently in small amounts for 40 minutes.
After the boil, cool the wort to 95°F, aerate, and pitch yeast.
Add the first dry hops during active fermentation, when the gravity has dropped into the 1.028-1.038 range.
When fermentation is complete and gravity is stable, cool to 70F and add the post-fermentation dry hops. After 3 days cold crash, package and carbonate.

Notes: Steep the grains in the mid 150s for 45-60 minutes.
It is assuming a 5 gallon batch,
3 gallon - 60 minute boil, and adding the extract at the beginning.
If you can do a full boil you probably wouldn't need the extra 1oz.Citra at 60 minutes.

As far as First Wort Hop / Steeping hops.... I would add them with around 10 min left in steep (before rinse), and put them in a different bag than the grain. Then you can leave them in for the whole boil.

Notes: Trying an all Cascade pale ale, take 2. Dropped the Munich malt by 100g. Swapped victory for melanoidin and carared. Upped whirlpool hops to 30g.
90 minutes boil to reduce volume, 5 minute hops added at 5 minutes, but no chill adds to bitterness. Whirlpool hops are at bottom of steel fermenter, added the wort in hot (sanitizes nicely), set outside at -10°C to chill. |
