Slurry from bottom of Westveteren 8 bottle grown up to slurry from 15 gallon batch.
Special Instructions / Notes:
Start inverting sugar right away. Afterwards, bring sugar and water to boil and boil down to thick dark syrup over course of 4 hours. Take first runnings of wort and boil to dark caramel. Add both back to main boil at 60 minute mark. |

Added 15 ml lactic acid.
42C for 36 hours.
OG 9 brix =1.035. Fermented down to 5 brix=1.011.
Added 3 kg mango flesh (kensington pride tray, 18 mangoes) after 2 weeks (Sunday 11 nov).
Thursday 15/11 am 5 brix = 1.011.
Monday 19/11 racked 21 litres into 2ndary. |

Notes: 5g of each hop added to wort when drained from mash. Put to one side during boil.
Another 5g of each hop added to first wort hops to make 50g total for 15 minute hop addition.
Wort then cooled to approx 75C and 40g of each hop added in separate bag and added for 30 minute hop stand.
Hop stand bag added to fermenter.
Fermentation at 19C.
After 7 days hop stand bag removed and dry hops added.
Packaged after 10 days

Notes: Hops aged in open air for a minimum of 1mo prior to brewing. Hops should only impart antimicrobial benefits and no bittering.
Maltodextrin added to the wort prior to boil.
No chill (no counter flow), straight into bucket. Leave bucket exposed to air 24hr.
After 24hr, pitch Lambic Yeast strains.
After primary, rack into glass carboys. Introduce oak chips and 6.4 pounds of cherries to each 4gal of beer. Add lambic dreggs as available.
Ferment in secondary on fruit for 3-6mos.
