Notes: 90 minute boil. Chill to 64F. O2 for 60 seconds. Ramp primary from 64F to 68F over 6 days. Secondary at 60F until FG is reached. Then crash at 38-40F until ale clarifies. Prime with golden candi syrupat 30grams per gallon. Bottles at 72F for 10 days. Bottle condition at cellar temps for 12 months. |

Notes: 1. American Amber (Red) Ale with a sharp bite of citrusy hops.
2. American 2-row pale ale malt, American Crystal 60L and Victory malt rounds out the grain bill. Mash temperatures in the range of 152°F to 154°F create a wort with a nice balance of fermentable and non-fermentable sugars. Sorachi Ace hops add a uniquely lemony bitterness, homegrown Cascade hops add grapefruit flavor and Citra whole leave hops added during the cool down add unique aroma. Yeast: White Labs WLP001(California Ale).
3. Sword of Saint Peter is the first of 12 brews in the Twelve Apostles beer line. Each of the 12 brews are American Amber Ales. Experimentation with water profile, temperature variations including ambient temp., grain bill, hops varieties and yeast strains provide endless opportunity to evolve and improve this beer over the year.
4. Cascade hops Alpha Acid was age adjusted in this recipe since the details of storage and pick date are a known variable.

Notes: This is the same Summer Ale as batch 10. sample of batch #10 lacked hop aroma.Must get to doing some dry hopping.Added goldings this time at flame out into top of B.K.without a muslin bag. Don't do this as it cloggs the system really bad!! Make sure you use a muslin bag or one of those hop balls to eliminate this in-convenience. |

Notes: The modern recipe according to Bateman's. Removes the black malt from the more traditional recipe and as a result it is much lighter color (EBC 38). Nottingham is not perfect match for their proprietary house yeast, but most similar available profile.
Dialing back the SG a bit to match the 4.8% prescribed by the brewery. Also dialing back the volume to 6 G in fermentor and matching ~40 IBUs. Changing salts and hops to grams.

Notes: Primary Fermentation: Was complete within 1 week. 3rd successive identical FG measurement taken on day 9.
Secondary Fermentation: 6-9 months with the majority of that time spent aging on oak cubes (see below)
Add 1.3 oz. Hungarian Oak Cubes (med. toast) and 0.7 oz. American Oak Cubes (Med. plus toast) to secondary
Prepare by soaking in bourbon x2 weeks. Discard bourbon (it's hard to take away bourbon flavor once it's added to the fermenter!).
The story behind the name:
Baptist minister and distiller, Rev. Elijah Craig (1738-1808) is widely credited with inventing Bourbon Whiskey, and was the first to utilize extended aging of the spirit in charred oak casks to impart Bourbon's distinct flavor and color. |
