This American style Black IPA, also known as Cascadian Dark Ale, balances moderate roast character with medium-high hop bitterness. Briess Special Dark extract, Victory® and 80L provide a moderate degree of caramel malt character. The distinct citrus, grapefruit and slight pine characteristics of the hops complement
the roasted malt flavor and aroma of this Black IPA creating all the attributes you would expect in an American Style IPA. |

Notes: Start fermentation cool at about 50°F (10°C), and hold there for the first forty-eight hours.
For every day thereafter, increase your temperature by 1°F (about 0.5°C) for ten days.
After it’s been in the fermentor for twelve days, it should be at a steady 60°F (15.5°C). Activity in the airlock should be low (but not absent).
At that point, I let that sucker free rise to the warmest temperature I can find in my brewery. Why? To ensure that my yeast goes back and does a healthy diacetyl cleanup and scrounges up all remaining fermentable sugars. I give the beer an additional nine days (now we’re at three weeks in the fermentor)
Then cold-crash to near-freezing to begin the clearing process. |

We really loved this porter - sweet and velvety, nice coffee and chocolate flavours.
Served on draught, great head retention and looked just like Guinness as it was settling.
Compared it to a can of Guinness draughtflow and there was no comparison - Guinness tasted thin and chemically, the London Porter delicious. I'll be doing this recipe again. |

Notes: After 8 days of primary fermentation did a diacetyl rest for 2 days at 65 degrees. Rack to secondary on top of thawed frozen blueberries and left for 10 days. Removed blueberries and slowly dropped to lagering temps. Lagered at 38 degrees for 4 weeks.
The .5oz of extract at bottling really makes the blueberry aroma come out in the beer. A clean lager with nice smooth not too sweet blueberry flavor. Hops are pretty interchangeable as the blueberry gives most of the flavor and aroma. |
