Last batch was good, but on the bitter side. Cutting the 15 min magnum charge and rolling with new hops HRC003 - EXP-1302-333, El Dorado, and HBC 586.
Version 9 now.
Adding ascorbate to help ease oxidation issues with packaging per some information out there.
Taking away the whirlfloc.
Making some adjustments from version 7 due to availability of the malts and hops. Version 7 ended up being the best one I have made yet.
Will be trying a bunch of yeast through this series. Cosmic Punch is a good one if you have the right hops. Trying to clear out the samples I got at HBC 2022 Pittsburgh, so there's some whole cone stuff and lupulin pellets. Not sure if it's really going to go, but will find out with Verdant and K97 co-pitched.
Also bought some Oast House Strata Extract and will add that at kegging. Recommendation was for 0.5 mL for 5 gallons at kegging.
If you're wondering, the rye adds considerable body along with the spelt (wheat) and oats. It's pretty thick

Using Wyeast 1318 instead of Whitelabs WLP067
Added 650 grams of acidulated malt to drop the PH to 5.2
Tweaked the water chemistry a little too - dropped the Baking Soda - 2:1 Calcium Chloride to Calcium Sulphate ratio
Use Epsom Salt, calcium chloride and calcium sulfate additions to adjust water profile to about 175–200 ppm chloride, 75–100 ppm sulfate, and 125–150 ppm calcium.
Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 60 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 4 days later, add the second dry-hop addition for another 4 days. Package at 2.6 volumes of CO2 and consume fresh.

Intended to bottle on 1/16/2016. The beer finished just above 1.020, but tastes very sweet. It's undrinkable like this; I can choke one down if I mix with something else. I racked it to a smaller carboy and added some amylase enzyme because I've been told that can restart a stuck fermentation, but I'm doubtful.
It did start fermenting again after adding the amylase. BTW, I think my LHBS ordered coffee malt for me instead of brown malt. That would explain why this beer is inky black.
1/20/2017: I just drank the last bottle of this. After aging for about a year it was really good, just served it a little colder than normal for this style to mask the sweetness (which has subsided.) I'm sad it's gone, and I will brew it again soon (using real brown malt next time, and fermenting a little warmer which T-58 likes so it attenuates better |
