Notes: Oatmeal toasted in oven to golden color 3 days prior to brewing.
Leave oats in open air and stir occasionally for proper evaporation of harsh tasting oils. Steep in large loose muslin bag preferably a 5 gallon paint strainer for proper steeping.
4.0oz Sumatra at 10 mins and left in for 10 mins after flameout

Notes: This is the Quadruple Version of the Infinite Stout.
It's conditioned with oak.
It's blended with cold brew coffee.
It has chocolate in it.
It's a milk stout.
It's a breakfast stout.
It's an oatmeal stout.
It's strong as a musk ox.
It's black as space.
Don't be fooled by the projected numbers. The final gravity will be lower and the alcohol will be higher (12-13%) -- especially after conditioning.
Lactose is added 15 minutes into the boil. All hops and other ingredients added during the boil go into the hops spider.
After mashing in the oak spirals during the last ten minutes of the mash, remove them, boil the wart, and add the oak spirals back into the fermenter where they will remain until initial fermentation is complete.
3.000L Starter of both ale yeasts mixed together must be used to reach final (pre-conditioned) gravity. Initial fermentation temperature is 68f.
After initial fermentation, hydrate conditioning ale yeast with 500ml for 1 hour on stir plate, then add 4.4oz of table sugar and set back on the stir plate just until the sugar is disolved. Pitch into a sterile carboy or bucket.
Beer must be conditioned (aged) for best flavor. Rack the beer into the sterile carboy or bucket. Before bottling the Ale, fill each 500ml bottle with CO2 which will push the air out of the bottles because CO2 is heavier than air. Cork/Cap and Condition at 59-61f in darkness at a minimum rate of one (1) week for every expected percent of alcohol above 5%. |

DIRECTIONS
Mash at 148°F (64°C) for 90 minutes, then sparge and boil for 90 minutes, following the hops schedule and adding the candi syrup at the start of the boil. Chill to 68°F (20°C). According to the website, Vicaris Tripel is fermented at 75°F (24°C) and lagered at 34°F (1°C), so pitch the yeast, and after 48 hours, raise the temperature to 75°F (24°C) and ferment to completion. Lager near freezing for at least one month before bottle conditioning.

Brewed by Chris Sartori from Stone Brewing Company in 2010. A dark chocolate stout with dried dark fruit finish. Simcoe provides bitterness with subtle fruity supporting notes, contrasting the chocolate and coffee-laden malt profile. The finish is warming with vanilla and rich dark fruit depth. Take small volume of wort out of the run off and steep the raisins in it, then crush them up. This will help to release the dark fruit aromas into the wort.

Notes: - Homebrew store ran out of UK pale so had to substitute some Maris Otter
- Brewed on 10/6/18
- Expecting mash efficiency of 70% (vs. typical ~75%-79% for smaller beers) which implies a pre boil gravity of 1.078
- Add brewing salts and lactic acid to the strike water prior to doughing-in
- Initial PH was X.X vs. 5.37 expected. **Tested PH meter and need to recalibrate. Can't rely on reading which I believe was showing too high.
- Mash temp fluctuated a bit but was able to settle it at ~154F
- Hit 17.9 plato pre boil gravity which converts to 1.074 vs. 1.078 target so 66% mash efficiency vs. 70% expected. **For big beers going forward I should not expect better than 66-67% mash efficiency.
- Original gravity reading was 23.6 plato which converts to 1.099
- After boil had ~6.25 gallons in the kettle and ~5.75 gallons made it into the fermenter
- Pitched 2 smack packs of wyeast 1728; started fermentation at 64F and held here.
- Packaged on 10/17/18 and final gravity reading was 1.027 so attenuation was 73% vs. 71% expected.
- This beer scored a 40 and got second place in it's category in the Square Kegs Winterbrew 2019 competition |
