Notes: First attempt brewing full 5 gal batch with hibiscus. I would go lighter on hibiscus next time I brew it (about half). Abv is too high for an average blonde. Still came out with no hot/boozy flavor. bottle conditioned this one for 3 weeks. Came out really well.
The herbal, floral and sweet spice notes from the Hallertau pair really well with the floral notes from the hibiscus. The hibiscus lends a really nice cranberry-like tartness and a deep pinkish/crimson color along with some rosey aroma. The amount of hibiscus overpowers the malt character that I think all blondes should have. But, still delicious.

Notes: Bring 12L water to 72*C and add grains (preferably in a nylon bag). Adjust temp as needed to remain stable at 67*C for 60 min. Shift bag lightly as needed to ensure water has maximum contact with the grains. Prep sparge water by heating 10L water to 76*C. In final 5 min of infusion, raise mash temperature to 76*C for mash out. Lift grains from wort and place in large strainer above the kettle. In batches, slowly sparge the grain bag over the course of 10 min. Boil volume should be close to 22L after sparge. Top off to 23L. Following hop schedule as noted. Add DME at 30 min. Add LME at 15 min, followed by Irish Moss and Servomyces. Cool to <26*C and transfer to fermentor. Aerate and pitch 2L yeast starter. Ferment in primary for 7-10 days, transfer to secondary. Add pasteurized persimmon mash and dry hops in separate nylon bags. Ferment in secondary for 10-14 days or until desired flavor is achieved. |

Notes: Probably won't be bitter enough, note to self; change the hop profile, add the hallertau later, use something else for bittering.
- As expected, hops were a little low in intensity.
- Early tastings were very banana, and alcohol, it really just tasted like some weird banana liquer or something. 5 months later the initial "I'm drinking straight alcohol" mellowed into a very smooth tasty beer. Banana flavours have also mellowed. It's become a favourite at parties, where I'll pour 1 600 ML bottle into 3 wine glasses. Carbonation also really only became apparent after about 4 months, my storage area is generally between 20-23C in summer. |
