I like to be in the high 70's by day 3 and push into the 80's to finish. As to the name: My regular mid-strength Saison is called Salamander, so I named this one Avec les Bons Voeux de la Salamandre, or With the Best Wishes of the Salamander. Dupont of course calls theirs Avec Les Bons Vœux de la Brasserie Dupont, or With the Best Wishes of the Dupont Brewery.
