Saigo can mean 'last' and the similar 'Saigou' is also the first name of a famous local historical figure Saigou Takamori, the character the film 'Last Samurai' was based on. Saigou seemingly cheated death on many occasions and then allegedly committed ritual suicide when his army was defeated in Kagoshima.
Sadly, this will also be my last brew here, so 'Saigo' fits well.
This is listed as an Irish Red Ale, but I would be happy with it being a Brown Ale too.
This time the EKG hops are also a feature, so this could turn out more like Hobgoblin than my last Porter. Like last time, I am not attempting a clone due to the large amount of German Malt in the grain bill. |

Notes: Infusion mash at 155 (68C) for 60 minutes. Add Hops, Chocolate and Coffee as directed. Ferment for 14 days at 65 (18C). Soak .25 oz (7 g) of Toasted French Oak chips in 1 cup of Kentucky bourbon for 2 days. Soak ground Kona coffee in 1 cup (237 ml) boiled, cooled water overnight, covered, in the refrigerator. Strain out grounds and add cold-brewed coffee and bourbon with wood chips to sanitized secondary fermenter. Rack fermented stout onto secondary and condition at 50-60 for 2 to 6 months.
Note: Something is off - I'm not getting the predicted bitterness. It should come in at 73 IBUs.
.45 per 12 oz serving. |

Notes: This is hands down the best IPA I have ever tasted. The fragrence hits you in the face like a birthday cake! The first sip across the pallet brings out a smooth crisp semi-sweet light bodied ale followed by a delicous blend of grapefruit and passion fruit notes and then ends with a light kick in the teeth of bitterness. Perfectly ballenced. I have brewed this three times and the last two times were by request. Enjoy
The OG was slightly high coming in at 1.070 which is what I was counting on to drop the IBUs just a bit. First taste right on course for an amazing trilogy.
Wow. The Mosaic Hops add a new Element to this IPA. Delicous Grapefruit flavers with all the bitterness of big IPA. |

Notes: 6lbs Pilsen LME is a late addition at 15 minutes remaining in the boil.
IBUs being calculated here is wildly incorrect for some reason. This beer wasn't on the bitter side at all.
Note one of the few brews I have had a blowout start on, recommend adjusting the volume to 5gal instead of 5.5 to give more headroom in the primary. |

Notes: After boil, and after cooling to approx 40 C, lower pH to approx 4.5 by adding lactic acid (I have 80%. I think 88% might be more common) I will add a tsp, measure pH, rince repeat until I have correct pH.
Do not oxygenate before adding lactic acid bacteria.
Add lactic acid bacteria, top off with some carbonated water. cover as best as possible. keep away from oxygen.
Keep at approx 40 ceclius.(should be done by 1-3 days)
Let LAB do it's work. Measure pH approx each 12 hours.
When correct pH is reached (approx 3.5 for me), add 10 gram nelson as lacto stop, and add a decanted 0.75 liter Brett starter(1 vial WLP654 brettanomyces claussenii grown for 7 days and settled for 3 days for flocculation, 10 days all in all)
Do NOT oxygenate wort when adding hops and Brett yeast. Oxygenating the wort at this time might increase the probability of wet horse blanket/leathery aromas. We want more fruit here, so no oxygenation.
When correct FG is reached(approx 14 days) add 90 gram nelson and let it stay for 4-5 days.
Bottle with 7g/l sugar.
Brett will do it's magic over time. So expect that this is a product that will change over at least 6 months time in bottle/keg. |
