| Notes: If you notice the 2 day hop contact times. I've been having astringency issues/hop burn and from what I have read the make up of the wort really draws out and holds on to polyphenols in the hops. I originally did 4 days. Tasted at about 50 hours into the dry hop and it was phenomenal. Tasted again on day 4 when I pulled them and it was super astringent. Cold crash and conditioning at almost lager temps dropped most of it out but it still lingered there even now 2 weeks after. Going forward on this scale at least 2 day dry hops will be the move. Apparently its not as big of an issue as the batches get larger. |

Recipe: Winterhausen ESB
ESB is distinctly English, with significant malt complexity (though usually of the lower-Lovibond variety), a fairly high IBU-to-gravity ratio, and English flavor/aroma hops and yeast strains. With the right ingredients, this recipe will re-create the kinds of flavors you’d find at pubs all over England on any given day—a showcase of English malt and hops, pouring a beautiful brilliant jewel-toned orange.

0.5 oz (14 g) East Kent Goldings at flame-out
YEAST
Wyeast 1968 London ESB
DIRECTIONS
Steep the grains at 160°F (71°C) for 30 minutes, then remove the bag and allow to drain into the wort. Add the DME while stirring, and stir until completely dissolved. Top up as necessary to obtain 6 gallons (23 liters) of wort. Boil for 60 minutes, adding hops according to the schedule. After the boil, chill the wort to slightly below fermentation temperature, about 66°F (19°C). Aerate the wort with pure oxygen or filtered air and pitch the yeast. Ferment at 68°F (20°C) for 5 days, then allow the temperature to rise to 70°F (21°C) through the end of primary fermentation. Crash the beer to 35°F (2°C), then bottle or keg the beer and carbonate to just under 2 volumes of CO2.

Notes: Mill the grains and mix with 4 gal (15.4 l) of 163°F (73°C) strike water to reach a mash temperature of 152°F (67°C). Hold this temperature for 60 minutes. Vorlauf until your runnings are clear, then run off into the kettle. Sparge the grains with 3.2 gal (12 l) and top up as necessary to obtain 6 gal (23 l) of wort. Boil for 60 minutes, following the hops and additions schedule.
After the boil, chill the wort to slightly below fermentation temperature, about 67°F (20°C). Aerate the wort with pure oxygen or filtered air and pitch the yeast.
Ferment at 68°F (20°C) until the completion of primary fermentation, then allow the temperature to rise at will. Cold crash the beer to 35°F (2°C), then bottle or keg the beer and carbonate to approximately 2.75 volumes. |
