Make sure if replicating that whatever pale or pilsen malt is used has high DP and that the rye and Munich malt used have enough DP to at least pull most of their own weight! Note that I intended to use only Notty yeast for this, but I only had half a packet (made 2.5 gal batch of something else) on hand, and had the idea of using Koln Kolsch yeast followed after 2/3 of ferment by Notty to dry it out the rest of the way. |  |

 Infusion Mash at 155F for 60 mins. Add Hops, chocolate, and coffee as specified. Ferment for 2 weeks at 65F. Soak .25 oz French Oak chips in one cup Kentucky Bourbon for 2 days. Soak ground kona coffee in 1 cup boiled, cooled water and leave overnight, covered in refrigerator. Strain out grounds and add cold coffee and bourbon, with wood chips to secondary. Rack fermented stout into this mixture and condition in secondary at 55-60F for 2-6 mos.

                | Notes: Our Tripel recipe is very traditional in it's ingredients. Candi sugar will be added to raise gravity and ABV to the higher end of traditional style recommendations. Instead of just using saaz hops for bittering, we will be adding a whirlpool addition to help enhance the spiced characteristic already imparted to the beer from the grain/yeast.  A mash addition of lactic acid helps adjust mash pH for healthy fermentation. A trappist tripel yeast strain was selected to produce expected stylistic esters. We are adjusting our water chemistry to resemble Dusseldorf minerality which are nearly the same as Belgian brewing water profiles. |  |
