Notes: Named because the grape harvest occurs around M1, and we’re ‘converging’ beer and wine here into something new.
Grape juice was treated with Lallzyme EX-V and pectin enzyme, allowed to macerate for a day. About 26°Brix (1.110 SG)
Mash temperature is high to retain more unfermentable sugars
Lightly simmer grape must ~15 minutes to kill unwanted yeasts/molds before adding directly to fermenter. Transfer cooled wort on top. |

Notes: Mash at 150 for 60 minutes.
Chill wort to approx 160 deg and use a pump to whirlpool for 30 min adding in majority of the hops.
Fermented @ 85 degrees in temp controlled conical, keeping constant temperature.
Recommend using a blow-off tube for the Kviek yeasts.
Primary activity done after 2 days. Terminal gravity reached on day 4, final gravity 1.01.
Remove blow off tube and put Co2 on fermenter. Dry hop @ day 5 after dropping the temperature to low 60s. |

| Notes: Kettle Soured with preferred Lactobacillus strain (Brevis/Plantarum/Casei) to pH 3.8 (normally 12h - 18h at 40°C). Then, boil for 30 min adding hops at whirpool (90°) for 5 minutes. Cool the wort to 16°C, then pitch Torulaspora delbrueckii. Let the primary fermentation run through 48h, then pitch S. cerevisae var. diastaticus. After 4 days of fermentation (2/3 of the remaining sugars), dry hop with Nelson Sauvin, Columbus and EKG. |

Notes: This is similar to NEIPA 2, except that we've complicated things slightly :)
Adding roughly 20% of malted white wheat (in place of some base malt). This extra protein should improve head quality(?).
This in addition to 20% of oats. Why am I doing this again?
I've also added a meager 3% Crystal 40, in hopes of getting a slightly more orange tint.
I was originally going to make this Galaxy + (Cryo)Citra. However, fear of cryo-burn is real, so I've improvised a bit.
Citra down to 1oz (.5 of cryo). Add in amarillo of 2oz. Also scale back Galaxy slightly to 1.5 (big bag of it, and can overpower other hops).
Overall, 1 oz whirpool (0.4 / gallon) and 3.5 oz dry hop (~ 1.5 / gallon).
According to recent beersmith podcast w/ M. Tonsmeire, suggests up to (1 / gallon) whirpool and ( < 8 / gallon) dry hop. |
