Ale yeast 1st until dopped around 50%. temp 20deg c reduce temp to 7 deg v. Pitch lager yeast. Await gravity to max out then carry out diacetyl rest 17deg c Result: Racked to corney. Forced carb in corney @ 30-40 psi rocked for 20 min twice. Dispensed 5 hrs later through tap at 6 psi. Great taste though hazey. Well balanced carbonation at tap. Also Bottled 10 x 500ml. Stored @7 deg for 2 weeks. Beer clear. Fruity front taste. Looking for the crisp aftertaste but not there. Suggest pitching lager yeast earlier @ 40% (1030).

Author: The Brew Nurse Boil Size: 6.3 Gallons Boil Time: 60 Boil Gravity: 1.035 Efficiency: 45 Mash Thickness: N/A Sugar Scale: Specific Gravity Brew Method: Extract Pitch Rate: 0.5 Primary Temp: 70 ° F Priming Method: N/A Priming Amount: N/A Creation Date: 8/1/2018 1:36 AM Notes: The extract beer base I have been using for experimentation with different fruits. - 3 gallon steep @157F - 5.5 gallon boil - needs to be increased as my 10 gallon kettle has close to 20% evaporation loss of wort. - 1oz Saaz (Czech) @60mins - 1oz Saaz (Czech) @30mins - Chilled with immersion chiller using ice bath via submersible pump to 78F - Yeast pitched (1 pack WLP320 - no starter) - Transfered to 6.5 gallon carboy via ball valve and sealed with blow off tube - Placed in wine closet completely free of outside light - room temperature - Noticeable clumping of yeast and forming of top layer within 12 hours - Large Krausen seen and vigorous fermentation/bubbling within 24 hours. - Will primary 2 weeks then be racking onto 6.75lbs freshly mashed mango for 1-2 weeks in a 5 gallon carboy
