| Notes: Oak Cubes toasted and added to secondary (barrel) at transfer (3 weeks) with 2 vanilla beans (split) and one cinnamon stick soaked in rum. Aged for 6 weeks then added organic cacao nibs (roasted for 15 min @180C) plus 75g ground coffee in bag. Aged for a further 3 weeks prior to bottling. |

Steeped 200g carpilis in 3 litres of 70deg water 10 minutes added 25 g galaxy boiled 10 minutes then added it to tbe fermentor with 1kg light dry malt, 200 g of white suger and the coopers can mixed well topped up to 23l with cold water pithed yeast on top. Put into fermenter fridge at 18deg with glad wrap on top. |
