2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5.25 gal recipe you will need extra because of the fluid loss during the boil process
1lb Caramel 40L Grain
1lb Briess 2 Row Grain
.5lbs Vienna Grain
.5lbs Carahell
6bs Golden LME
3oz Magnum Hops
6.5oz Centennial Hops
1 Safale US-05
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Golden LME, and return wort to boil
Add 3oz Magnum hops and boil for 60 minutes
Add 2oz Centennial hops and boil for 15 minutes
Add 2.2oz Centennial hops and boil for 10 minutes
Add 2.3oz Centennial hops and boil for 2 minutes
Remove pot and enough bottled water to bring the specific gravity to 1.054
Cool wort to 70 degrees
Add 1 pack of Safale US-05 yeast
Fermentation:
Primary 10 days, Secondary 10 days
Kegging:
Keg and set CO2 to 20psi for 4-5 days
Reduce CO2 to 5 - 7psi, pour and enjoy

Notes: Steeped the specialty grains at 155F for 30min. Brought water to boil (added a bit more water to make it about 3 gallons), added hops (for 60 min). About 5 min. out I added 2 lb. honey.
Cooled to 69 F w/ wort chiller. Added tap water for total of 5.5 gallons. Pitched yeast (without waiting the 3 hrs. - smack yeast).
Will ferment in my basement, in a 6.5 gallon carboy,at about 70 Deg. F., then rack to 5 gallon carboy after about one week. |

Notes: The mini-mash steeping time is 45 minutes at about 155 F. Drain bag and sparge. Bring wort to boiling and add malt extract. Bring back to boil and add 1 oz Strissel Spalt hops. (Note: Boil is only 30 minutes.) At 15 minutes add Coriander and bitter orange peel. At 5 minutes remaining add 0.5 oz Strissel Spalt hops. Notes: 1. Heat 2.5 gallons of water to 150° F using a thermometer.
2. Please note there are no specialty grains in this recipe.
3. Stir in the 6 lbs Gold malt syrup and 1 lb Golden Light DME,
and heat as necessary to 145° F using a thermometer.
4. Add the 5 ml of Alpha Amylase Enzyme, and allow to sit for 1
hour, checking temperature every 10 minutes. Heat as neces-
sary to maintain temperature.
5. Bring wort to a boil. Boil for 10 minutes and remove from heat.
•Add 2 oz each of Nelson Sauvin and Hallertau Blanc hops.
Allow to steep for 10 minutes before chilling.
6. Cool the wort. When the 10-minute boil and 10 minute
hopstand is finished, cool the wort to approximately 100° F
as rapidly as possible. Use a wort chiller, or put the kettle in an
ice bath in your sink.
7. Sanitize fermenting equipment and yeast pack. While the
wort cools, sanitize the fermenting equipment – fermenter, lid
or stopper, airlock, funnel, etc – along with the yeast packet.
8. Fill primary fermenter with 2 gallons of cold water, then pour
in the cooled wort. Leave any thick sludge in the bottom of the
kettle.
9. Add more cold water as needed to bring the volume to
5 gallons.
10. Aerate the wort. Seal the fermenter and rock back and forth
to splash for a few minutes, or use an aeration system and
diffusion stone.
11. Measure specific gravity of the wort with a hydrometer
and record in the "BREWER'S NOTES" section.
12. Add yeast once the temperature of the wort is 75°F or lower
(not warm to the touch). Sanitize and open the yeast pack and
carefully pour the contents into the primary fermenter.
13. Add the 5 ml Amyloglucosidase Enzyme to the fermenter.
14. Seal the fermenter. Add approximately 1 tablespoon of water
to the sanitized fermentation lock. Insert the airlock into rubber
stopper or lid, and seal the fermenter.
15. Move the fermenter to a warm, dark, quiet spot until
fermentation begins. |
