Notes

Steeped the specialty grains at 155F for 30min. Brought water to boil (added a bit more water to make it about 3 gallons), added hops (for 60 min). About 5 min. out I added 2 lb. honey.

Cooled to 69 F w/ wort chiller. Added tap water for total of 5.5 gallons. Pitched yeast (without waiting the 3 hrs. - smack yeast).

Will ferment in my basement, in a 6.5 gallon carboy,at about 70 Deg. F., then rack to 5 gallon carboy after about one week.
