2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5.25 gal recipe you will need extra because of the fluid loss during the boil process
.5lbs Caramel 40L
.5lbs Caramel 80L
3lbs Gold Liquid Extract
3lbs Light Dry Malt Extract
.65lbs Corn Sugar
6oz Mosaic Hops
1 Safale US-05
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Gold extract and return wort to boil
Add 1oz Mosaic hops and boil for 60 minutes
Add 1oz Mosaic hops and boil for 30 minutes
Add .65lbs corn sugar and boil for 10minutes
Add 2oz Mosaic hops at flame out
Add enough bottled water to bring the specific gravity to 1.053
Cool wort to 70 degrees
Add 1 pack of Safale US-05 yeast
Fermentation:
Primary – 2 weeks
Secondary – 4 weeks
Add 2oz Mosaic hops 1 week before bottling
Keg:
6 weeks after brew date

9.1 AAU German Perle hops (60 min) (1.3 oz./37 g of 7% alpha acids)
3.8 AAU English Kent Goldings hops (10 min)(0.75 oz./21 g of 5% alpha acids)
1.3 AAU English Kent Goldings hops (0 min) (0.25 oz./7 g of 5% alpha acids)
1.8 AAU Czech Saaz hops (0 min) (0.5 oz./14 g of 3.5% alpha acids)
1 tsp coriander (coarsely crushed)
1 tsp sweet orange peel (coarsely crushed)
White Labs WLP565 (Belgian Saison) or Wyeast 3724 (Belgian Saison) yeast
Step by Step
Mash grains at 152 °F (67 °C) for 90 minutes. Boil wort for 75 minutes adding hops per scheduled times and spices with 5 minutes left in boil. Cool wort to room temperature and drain or rack the wort off of the trub. Aerate the cool wort with as much air or pure oxygen as possible. Ferment at 75 °F (24 °C) for 3 weeks in the primary and 3 weeks in the secondary. |

| Notes: A quick brew. Place extract in hot water for 20 minutes. Bake 4 habaneros in oven until soft and chop them finely. Use gloves. Bring 3 litres of water to a boil, add hop extract, sugar and the habaneros. Boil for a couple of minutes. Transfer to fermentor. Add maltodextrin and dry extract, stir, and then add liquid extract. Stir well. Fill up with cold tap water (total 24 l). Stir again, and oxygenate. Make sure the wort holds about 18-22 degrees C. Pitch yeast. Add dry hops and fruit juice on day 4. |
