Notes: English Pales are not that bitter. There is more emphasis on the Malt which tends to have caramel and roasted notes. Traditionally these beers are poured from cask, usually flat without any CO2. If you're serving this beer at home we encourage you to only carbonate around 6-8 psi to have a true English Pale Ale experience.

- Add all steeping grains to steeping bag and steep as per your
preferred steeping method. Generally, 155*-160* F for 30
minutes.
- Remove grains, sparge with 8 Oz. of 170*F water, bring to boil
then turn off heat, and add extract.
Once extract is amply mixed, bring back to a boil.
- Once water comes to a boil, add bittering hops and start the 60
min. clock.
- After flame out cool wort to 85*-80* F, transfer to fermenter &
add cool water to bring total volume to 4.2 Gals. ( the addition of
cool water should bring Temp down to pitching Temp (68* F)
- After Fermentation.... let sit on trub for 3-4 days then bottle.
- Add 1 Sugar Fizz Drop per 12 oz bottle when bottling.
- Condition in bottle for 4-5 weeks, timing is somewhat flex able. |

Notes: This is based on Midwest Supplies Bavarian Hefeweizen Extract Kit, with some alterations. Would prefer to build it all grain, but didn't bring the stuff with me when I PCSed.
I want to build a deeper profile, and as such, am adding 1lb of Gambrinus Honey Malt as the steeping grain, and .5oz of sorachi ace hops at 50 min. Added 1lb of local wildflower honey.
Adding 1oz fresh lemon zest and 2 oz fresh sliced ginger to boil at 50 min.
Hoping to have an end result that's similar to Honeyweiss meets Shock Top, but with a honey ginger bite instead of the overdone orange/coriander.

Lemongrass Alternatives:
Use any one or more of the following methods as suitable. Suspend it in the wort/beer using a grain bag or a tea/spice steeper; use more bags/steepers as needed.
1. Lemongrass Boil (Best for Flavor)
Add to boil pot 5-10 min before flame-out.
2. Lemongrass Whirlpool (Good balance of Flavor & Fragrance)
Use 25-50% more. Add to wort after flame-out (at 203 F) and let it steep in there until transfer to primary fermenter; cover with a lid (at 170) to keep the fragrance and flavors in the beer.
3. Lemongrass Dry Hop (Best for Fragrance)
Use 50-100% more i.e. up to 2X the amount during secondary fermentation.
PS: Lemongrass by weight roughly based on 1-2 tea spoons per 12 oz of finished Beer. |
