Notes: Apples: cook cores/skins with fruit to 4lb in about 1.5 gallons of water (expecting 0.4 gal loss to boil). No fruit in primary (cooking is an extract process, fruit will be strained after a long cook). Skins make up at least 1lb of the total fruit solids. Accepting some pectin haze may remain in spite of enzyme addition in primary.
Make 2 quarts of strong tea with preferred mulling spices by adding off boil water; allow to stand until cool.
Juice: 3 gal. Apple Juice
1 gal apple juice = 8.34lb
(1) 12fl oz concentrate juice = 48fl oz juice/3.12lb juice
Total volume:
3 gal juice
0.50 gal honey
1.5 gal water
Sorbate in secondary, back sweeten to 1.01 gravity. No carbonation. Sweeten with either honey or apple juice concentrate as needed for balanced flavor. Alternately, bottle dry and mix with apple cider & mulling spices before serving for the Holidays :-D

Notes: 1. Bring 3 gallons of water to 160 degrees
2. Steep grains for 45 mins at 155 degrees
3. Dunk grain bag and lift out. Place on strainer
4. Slowly pour 1 gallon of 170 degree water over the grain bag and allow to almost completely drain the water.
5. Top up to 4 gallons of water as needed and bring to boil.
6. Remove from heat and add extract
7. Bring to a boil
8. Add 1 oz. Amarillo Hops 60 mins
9. Remove from heat and cool to 160 degrees
10. Add whirlpool hops 2 oz. Citra and 1 oz. Lemon Drop
11. Whirlpool for 30 mins
12. Chill to 70 degrees
13. Top up to 5.25 gallons in fermenter
14. Check OG
15. Pitch yeast
16. Transfer to secondary vessel after 7 days when active fermentation has ceased.
17. Add Blueberries and Lemon puree to secondary fermentation vessel.
18. Secondary ferment for 7-14 days

Bottled - 3/13/2018
Brewing: Mix of Grains steeped in 3 gal water at 160*F for ~15 min. Turned up heat and added 3.3lbs Light Gold Liquid Malt Extract. Brought to boil and poured over 6lbs crystallized wildflower honey. Topped up to 5.5 gal. 3/8 tsp nutrients added during aeration. Windsor ale yeast pitched at ~90*F (this is too high).

(Mead nutrient mix of 1:2 ratio Fermaid K to GoFerm)
Fining: After fermenting, braggot was pitch black but noticeably cloudy; no light would shine through. .75 tsp of gelatin finings were added to 1/2 cup cold water and allowed to sit for 1 hour. Braggot was racked into an intermediate bucket, it's primary fermentor cleaned & re-sanitized. The fining mix was added to the now secondary fermentor and the braggot was racked onto it. After two days, the color had not changed but the liquid was definitively clearer. Noticeably less yeast flavor. Left for a total of one week on finings.
Bottling: Bottle selection includes a 2l growler, several wine bottles, many grolsch bottles (all swing-top) and a few ~22oz crown-cap craft beer bottles. Bottles were rinsed, sanitized and aligned for easy filling. Bottling bucket and equipment were sanitized. 5oz of Corn Sugar were added to 1 cup of water and brought to a boil. After several minutes, this priming sugar was added to the bottling bucket. The braggot was racked onto the priming sugar, carefully leaving behind the remaining lees/finings. Primed braggot was distributed to bottles using a bottling wand. Final volume of braggot bottled was 4.5gal. Bottles put into large cardboard box and stored for 2-3 weeks.
Drinking: Carbonation was complete around 2.5 weeks after bottling. Moderate sediment in most bottles, with larger amounts in larger containers. On pouring, a light head forms and shortly dissipates; color is tan. Carbonation is similar to a soft drink or hefeweizen. Flavor is bitter dark malt followed by a mellow sweetness and yeast flavor throughout. Could be described as "a very malty soda with 7% abv." |
