Notes: WLP028 yeast pitched into a 1ltr flask of sterile "sweetened" water after bringing up to ambient temperature then covered for 12-24 hours prior to mixing into wort. I find this works well and this usually starts fermentation within 8 hours. (Note: boiling reduces O2 content, vigorously shaking flask prior to adding yeast is helpful)
Wort was cooled down to 70 degrees with copper immersion "chiller" before transporting to primary fermenter. Pitched yeast is added and additional sterile water is added to approximate 5 gallons when needed at this step, 10 minutes of aeration is then done. Specific gravity was taken; OG 1.108 (missed target by +.003)
I use a blow-off tube instead of the typical airlock as I find this works well for me. There have been times when the fermentation is robust and I get overflow. (tube is inserted into a gallon jug half filled with star san solution)
Target Fermentation is 7-10 days, will take several SG's before crashing, filtering and kegging. |

2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5gal recipe you will need extra because of the fluid loss during the boil process
1lb Briess Two Row
1lb Carahell
1Ib Caramel 10
.5lb Cara Pils/Dextrine
6bs Liquid Malt Extract
3.5oz Citra – aroma
3.5oz Centennial – dual
2 Saflager S-23 dry lager yeast
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 30 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Liquid Malt Extract and return wort to boil
Add 1oz Citra hops and boil for 60 minutes
Add 1oz Centennial hops and boil for 30 minutes
Add 1.5oz Citra hops and 1.5oz Centennial hops and boil for 10 minutes
Add 1oz Citra hops and 1oz Centennial hops at flame out and whirlpool for 1 minute
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.056
Add 2 packs of Saflager S-23 dry lager yeast
Fermentation:
Primary – 1 week at 60 degrees
Secondary – 1 week at 50 degrees
Secondary – 1 week at 30 - 35 degrees
Kegging:
Keg after 3 weeks and set CO2 to 20psi for 4-5 days, then reduce to 5-7 psi and enjoy!

Notes: The first impression when drinking this amber-brown ale is a malty nose with subdued hops aroma. The flavor is soft malt that may have a touch of smokiness and toastiness. The use of roasted barley brings out a soft, complex background.

- Add all steeping grains to steeping bag and steep as per your
preferred steeping method. Generally155*-160* F for 30
minutes.
- Remove grains, (Sparge with 8 Oz. of 170*F water) bring back to
boil then turn off heat, and add Extract & Brown Sugar. Once
extract is amply mixed, bring back to a boil.
- Once water comes to a boil, add bittering hops and start the 75
minute clock.
- After flame out cool wort to 80* F, transfer to fermenter & add
cool/cold water to bring total volume to 5.1 gals. ( the addition
of cool/cold water should bring Temp down to pitching Temp
68* F.
- After Fermentation.... let sit on trub for 3-5 days then bottle.
- Add 1 Sugar Fizz Drop per 12 oz bottle when bottling.
- Condition in bottle for 4-5 weeks, timing is somewhat flexiable.

Brewed extract w/grains option
Hops: Columbus dried hops, Centennial pellets
Used tap water, pre-boiled and cooled to 162º for steeping.
Steeped 12 oz Weyermann CaraMunich II & Weyermann Carafa Special III in 5.5 gal water @162º for 15 minutes. Drained fully.
Added 4.33 lbs Breiss CBW Golden Light DME
2.21 lbs. Breiss Munich LME + .92 lbs Golden Lite DME (equivalent to) 3.3 Munich LME; brought to a boil/60 minutes, added Columbus hops at 55 min.
After 20 min. whirlpool/stand, cooled in ice bath to 65º w/in 30 minutes
Aerated by pouring wort back and forth 6-7 times between sanitized pots/buckets
After straining out hops/gunk, 3.2 gallons wort poured into fermenter; added 2.2 gallons pre-boiled/cooled tap water
OG: 1.061 - Brewer’s Friend says 1.056 (I added a 1/2 lb. less malt than recipe. Tasted pretty hearty.)
Let sit overnight
Used Imperial Flagship liquid yeast, poured cold
Pitched at 2 p.m., wort @ 67º
Started foaming/belching overnight, up to 72º, nice thick krausen forming
Attached 4 large ice bags w/bungee cord by 6 AM, dropped to 65º within 2 hrs. Closed vents.
Dropped to 62º by 11 AM, 60º by 12 noon
Changed ice - 3 small bags - rose to 62º by 1 PM, 65º by 3
11.13 AM, about 61º, switched to 2 small bags. Fluctuated betw. 64-68º all day.
11.14 AM, at 62º in AM w/ice almost all melted but water cold & basement cooler (below freezing outside, set to 66º inside overnight). Removed a bag to get it back up a bit.
11.15 AM, ice mostly melted, wort at 66; cooler in basement so didn’t add more; stayed at 66-68 all day
11.16: no ice, still at 66-67º all day. Active fermentation ceased.
11.17: no ice, still at 66-67º all day
11.18: Dry-hopped w/ingredient variations
1.5 oz Chinook pellets
1.625 Chinook dried hops
1.25 oz Centennial pellets
= 4.375 oz dry hops (called for 4, guestimating that my dried hops have a bit lower AA)

Notes: 1. Do an yeast starter 2 days before the brewing day.
2. Brewing day: crush the grains (8oz wheat malt), add 2 gal of water to your kettle and heat to 155F; add the grain bag and stir for 30 minutes.
3. Remove the kettle from burner, remove the bag, add wheat LME (6.6lb) slowly while stirring. (malt has to be completely dissolved before placing the kettle back on the burner)
4. Heat to a boil; when reaching boil add 1 oz Cascade hops (@ 60min)
5. Add Irish Moss @ 15 min
6. Sanitize the fermentor; dissolve the Blueberry Special Blend in 4 cups of water and add to the fermentor along with 2 gal of cold water
7. Cool the wort as fast as possible to 70-80F
8. Pour the wort through a sanitized funnel and strainer
9. Top up the fermentor with cold water up to 5 gal. Stir the wort and oxygenate with O2 for 30 seconds.
10. Once wort reach 68-70F, take a gravity read and pitch the yeast. Seal the fermentor.
11. Primary fermentation: 68-72F for 10-14 days (dump the trub if you are using a conical); Secondary fermentation: 1 week
12. Dry hop with 0.5oz of Cascade 1 week before kegging (day 14)
13. On the kegging day, add 4oz of Blueberry flavor to your keg before force carbonate |

i have used us05 and some unused lager yeast (will need proofing and starter) im thinking i might just mix the two. (update : yeast was mislabeled - was not lager but belgian, so leaving that out and just going with the us05)
have a bit of a freezer situation trying to figure out. and leaving town in 7 days. but should be able to ferment at 70 for 7 days or maybe 14. then cold condition for another 7 or 14 days. no lines open yet so could lager until one opens up.
if i get a new freezer this week though, i suppose i could just do a pilsner instead. this brew seems a little simpler, cheaper, will get to try some cluster hops, and mixing of yeasts. -rb04282017
