Notes: 1. Fill brew pot with 4 gallons water.
2. Stir in water agents and bring water temp to 155 degrees.
3. Add steeping Carapils, Crystal, and Honey malt grains to bags and steep for 30 minutes.
4. Remove bags containing steeping grains from wort and let drain naturally - do not squeeze bags.
5. Add DME and additional water to bring amount in boil pot to 7.5 gals. Bring to boil.
6. Add Chinook hops after 30 minutes of boil.
7. After 45 minutes of boil, add lemon juice, lemon rinds, and 32 oz chopped ginger root.
8. After 65 minutes of boil, remove lemon rinds, add molasses, honey, Hibiscus flower syrup, maltodextrin, lemon zest, remaining chopped ginger root, yeast nutrients, and 1st addition of Amarillo hops.
9. After 70 minutes of boil, add whirl floc tablet.
10. After 75 minutes, turn off heat. Using distilled water, top up wort to 7-7.5 gallons and add 2nd addition of Amarillo hops for 15 minute hopstand.
11. Cool wort to 65-70 degrees, transfer to primary fermentor, pitch yeast, aerate.
12. After 7-10 days of fermentation, transfer to Corney keg.
Found the origins of this recipe on the internet 20+ years ago. Continue to adjust recipe from time to time. Recipe began with 48 oz of chopped fresh ginger root; pared it down to 40 oz (amount can certainly be adjusted to fit taste). Replaced cane sugar in original recipe with molasses. Lemons, molasses, and honey add subtle aromas and taste. Hibiscus flower syrup provides subtle flavor and some red color addition. Whether or not you like the taste of the end product, the brewing aromas are worth the effort! Has all the attributes of Ginger Rogers: a charmer with a taste for drama, flair, and adventure; a romantic with a killer sense of style. And no matter with whom she danced, she always did it backwards and in heels!

Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5gal recipe you will need extra because of the fluid loss during the boil process
1lb Briess Two Row
1lb Carahell
1Ib Caramel 10
.5lb Cara Pils/Dextrine
6bs Liquid Malt Extract
3.5oz Citra – aroma
3.5oz Centennial – dual
2 Saflager S-23 dry lager yeast
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 30 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Liquid Malt Extract and return wort to boil
Add 1oz Citra hops and boil for 60 minutes
Add 1oz Centennial hops and boil for 30 minutes
Add 1.5oz Citra hops and 1.5oz Centennial hops and boil for 10 minutes
Add 1oz Citra hops and 1oz Centennial hops at flame out and whirlpool for 1 minute
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.056
Add 2 packs of Saflager S-23 dry lager yeast
Fermentation:
Primary – 1 week at 60 degrees
Secondary – 1 week at 50 degrees
Secondary – 1 week at 30 - 35 degrees
Kegging:
Keg after 3 weeks and set CO2 to 20psi for 4-5 days, then reduce to 5-7 psi and enjoy!

steep grain as suggested on pack - and adding steeping grains into boil at 30mins. boil kettle set aside and add grains for 20 mins to steep then add to boil. Boiled kettle then poured into bowl at 7.5mins and let sit till 10mins then added grains for 20 then added to boil.
Boiling 5 litres of water as steeping grains in 1 litre to give 6 litres then adding 1litre of cold at fermenting total
Add hops as schedule. weighed out and leaving on side. Hoping non of the smell, flavour is lost as out in the elements. Vic secret smells outrageous! Amarillo hops is in a pack as finishing hops and using as suggested. Place in a cup of boiling water and let stand for 10mins then add to the fermentor. adding liquid and bag to fermentor. (not hopback)
Note let fermenter cool for 10 before adding vic secret then changed ice and water to cool further for 10.
Let cool for a further 10 mins while finishing hops were sitting in cup water before adding to fermenter. Amarillo hops in tea bag
added 2 litres of cold water to fermenter to get to 6 litres
waited 10mins to pitch yeast as first reading at 22 degrees. Pitched yeast at approx 20 d and shook like f**k. Done

After 6 days fermenting yeast has really slowed down. Going to rack half off and dry hop with vic secret (adding hops first then racking onto, and dry hop in the primary with 20 g wai-iti. Also going to bottle one beer now to see how it tastes. Shook both fermentors a little to swirl hops about.
After racking probably only got 2.5litre in both vessels left inc one bottled beer.

| Notes: Zest and save all the oranges. Once the oranges are zested remove the fruit from the rind. The Fruit and zest may be placed in a straining bag for easy removal after fermentation. Heat fruit and peels in 1/2 gallon of water to 160 degrees then turn off heat. Let steep as it cools. Once wort moved to fermentor, pour orange peels and fruit into the wort in fermentor. |
