Notes: Dusseldorf alt is an old German style fermented at 60-65F;conditioned at 50-60F. Compared to N. Europe alt it's slightly more bitter with similar sweet malt character. Bittersweet, nutty, dry finish reflects assertive hop and complex malt.
Best found at Alstadt (old town)in Dussel.
Turbinado in boil was a vanilla specialty sugar from Whole Foods. |

| Notes: Seep grains for 30 minutes at 155 degrees. Add boiling hops at the start of the boil then at 30 minutes add the Aroma hops and continue boil for another 15 minutes, 45 minute total boil time. Add Irish Moss with 12 minutes left in the boil. |

Notes: Higher gravity beer in small FV with added up front bitterness.
First starter with BRY-97 gave out after two days with ferment stalled at around 1030. Pitched in second packet which resulted in full ferment. Lowered temp down to 18 degrees on day 3. Cold crashed for a week before bottling.

Notes: 1. Heat 2.75 Gallons of H2O on high (10) until 140°
2. @140° turn heat down to medium (5) until temp reaches 155°
3. @155° turn heat down to low (2) and steep grain for 20 mins (160° max)
4. Remove grain and discard
5. Remove from heat and add LME/DME stir until combined
6. Return to heat and bring to boil. Add remaining ingredients per recipe.
