Notes: Steep grains 20-30 min. carapils is for beer head. Add malts and sugar and first hop,boil 45 min. Add second hop at last 10-15 min with the peel from 2 oranges. Cool wart pitch and leave in primary for 6-8 days. Move to secondary for 7 days this helps clarify. Bottle and enjoy. .5 tsp. corn sugar per 12z bottles. Leave 2 weeks.
You can use grapefruit peel instead of orange for a different flavor. |

Mix sugar, 1 gallon water, splash of lemon juice, bring to about 165*F for 30 minutes.
Add:
3 TSP Yeast Nutrient
1 TSP Tannin, Yeast Energizer
Top off water to target fermenter volume
Two bottles of Lemon Juice (32 oz, 64 oz total)
Keep in bucket/mash tun covered with a towel, no lid, for two days, agitating regularly to purge Potassium Sorbate and introduce oxygen.
Transfer to desired fermenting vessel, if not doing previous step in fermenter.
Pitch yeast, and mid fermentation, agitate and add:
3 tsp Yeast Nutrient
1 tsp Yeast Energizer
Third bottle of Lemon Juice
Ferment dry, add Potassium Sorbate/desired fining agents if bottling uncarbonated a few weeks before bottling.

Notes: 2 packs yeast, semi-clone of Sam Adams Double Agent IPL. I really liked that Sam when I tried it, so I put together a recipe that mirrors it pretty closely. The color may be a little lighter, but the IBU's and ABV are dead on as far as I can tell. 4 packets Nottingham, 44g. Or go with Wyeast Cali Lager smack pack and create 2L starter and then pitch. |

I added 2 pound of sugar to boost the ABV, and added the DME and sugar at 30 minutes in the boil to raise the IBUs. The kit recipe calls for 0.5 oz of Centennial at 60 minutes, but the kit comes with a full ounce. I added 0.5 oz at the start of the boil, and over the next 30 minutes I periodically threw in 3-4 pellets every few minutes. |

Notes: Version of my tried and true mead recipe for some friends who are just learning to brew. This uses 1/3 wildflower to make it more interesting than straight clover honey. I use dry malt extract as a nutrient source and chalk to buffer the pH during fermentation, as I've found this to make my batches very clean and predictable (no stuck fermentations). Typically even a strong mead as this will be very nice to drink in less than 3 months. I try to always use Wyeast Dry Mead as it is very predictable and drops ~100 gravity points, making it easy to achieve the desired final sweetness. This mead will be semi-sweet and should finish around 1.020.
Directions: Bring 3 gallons water plus malt extract to boil, add chalk & irish moss, boil 15 mins, turn off heat, add honey, steep for 10 mins, top off with water to yield full 5 gallons, chill, aerate and pitch yeast. |
