Notes: Mash all grains except chocolate wheat malt at 149° F (65° C) for 90 minutes. Powder chocolate wheat malt in a clean coffee grinder and sprinkle the powder over the top of the mash, then fly sparge as normal.
Chill wort to 70° F (21° C), pitch yeast, and monitor for activity. As soon as fermentation begins, chill to 64° F (18° C) and make sure you’ve attached a blowoff hose.
White Labs WLP007 Dry English ale yeast (optional, to increase
attenuation) (add at high krausen.
After fermentation is complete, rack to secondary and age four months to a year.
Original was Fawcett Maris and Fawcett Dark Crsytal. |

10 lb (4.5 kg) Gambrinus Pilsner Malt
HOPS SCHEDULE
4 oz (113 g) Citra [12% AA] at knockout
3 oz (85 g) Citra at dry hop
DIRECTIONS
Mash at 155°F (68°C) for 45 minutes. Boil for 90 minutes. Ferment at 55°F (13°C) with a diacetyl rest when fermentation is 70 percent complete (typically, at the end of the second day of fermentation).
To reduce DMS, collect only 4.5 gallons (17 l) in your kettle. Boil down to about 4 gallons (15 l) and then at knock out (with flame off), top up with 1 gallon (3.8 l) of chilled sterile water (a gallon jug of grocery-store water is best). This should bring your wort to 185°–195°F (85–90°C) and will get your wort out of the temperature danger zone where DMS precursors can redevelop.

Fermentis Saflager 3470 (or similar yeast of Weihenstephaner origin)

There are no bittering hops used in the recipe, as the large knock-out addition will provide enough bitterness. Target a mash pH of 5.3–5.4, with a wort pH of 5.15. |

Add 16 oz. of GoodBelly Juice Drink, Mango
Purge the top of Grainfather with CO2
Leave wort at 95°F for 18 hours or until 3.2-3.5 pH.
Boil for 60 minutes.
Chill to ale pitch temp

Let ferment for 7 days before taking gravity readings

Notes: Grind the rice in a coffee Grinder then cook for 20 min until soft.. Add to the mash. Mash at 122 for at least 30 min (the protien rest in this recipie is really important because you need to condition your rice sludge before sacc rest)
increase to 148-150 for 60 min (150 Max this is a light dry beer you want max conversion your target is 1.007 FG) minimal residual sweetness is key here.

Basic cinnamon extract recipe -
2 sticks cinnamon, roughly cracked
4 oz Vodka
Soak cinnamon in vodka, shake routinely for ~ a week, strain and add to taste
Chris Moon brought a sample of his Yorkshire version with a full 4 oz of cinnamon extract on the 2012 LA Brewery Bus Trip and it was amazing. A little sweet, but dead on in taste like an Oatmeal Raisin Cookie!
The raisins in the boil may have been the source of a haze that stuck around for the life of the beer, but overall the beer was a real winner and needs just a little extra tweaking to be truly awesome. |
