Notes: Fell for the hype on Northern Brewer's website about "rare" South African hops. So I bought an 8oz bag of the best sounding one, African Queen.
Use 2nd gen 2017 WY1272 culture. Typical IPA water chemistry and mash schedule.
Brewed 6/11/17, stats as noted. Tweaked hop schedule to include FWH. Overshot mash temp to 156F. Discovered thermometer on pot is reading 4deg lower than old thermometer. Made "vitality starter" with 1L of wort taken after boiling batch for 10min, after FWH charge, before 60m charge. Used small mason jar of 2nd gen 1272; starter was krausening by the time I pitched it.
I was a bit underwhelmed by the aroma of the AQ hops. They are very similar in earthy, danky aroma to CTZ, so they should play well. There was a faint fruitiness in the aroma which must be the gooseberry as the descriptors indicate. Hydro sample didn't have much of hop flavor, and I can already tell the bitterness will come across as half or less of what the calc'd IBUs indicate. We'll see how well the hops carry through after dry hopping.
Update: kegged carbed and on tap as of 7/6/17. Its not bad. Ended up as a kind of generic IPA/PA. There is a firm, danky bitterness that balances the malt bill really well. If I concentrate, I can pick up a very subtle fruitiness that must be those gooseberries the packaging indicated. I really like the malt backbone on this one. The 1/2lb of crystal wheat was a very nice addition that brings a creamy subtle sweetness and some character and color to an otherwise generic malt bill. For whatever reason, this beer pairs exceptionally well with a fine cigar, particularly Macanudo Cafe series.
Overall this wasn't a bad beer. I think I just had higher expectations over the hyped up hops. I believe it would grade out well as a typical copper colored American IPA. I'll continue to enjoy it with the occasional cigar, and try to do a better job coaxing the flavors out of the remaining 3oz of African Queen hops I have in another IPA recipe with a few other varieties. I'm thinking Pac. Jade and Simcoe would be a good start. |

Notes: Sugar is added 5 minutes until flameout directly to the boil
1/2 minerals added at mash the other half added during the boil after sparging.
Ferment at 64 then let naturally rise into mid to high 70's to finish. Add oak once most of ferment is done before racking for 5 days.
Total water needed is 20 gallons. Mash strike temp is 9 gallons at 130. Sparge at 170 with the other 11 gallons Use Herms to keep mash range at 145 for 45 minutes then raise up to 150 for 15 minutes.

Notes: This recipe uses reverse osmosis (RO) water. The water salt treatments are minimal; add 5 g calcium chloride (CaCl2) to the mash and 3 g CaCl2 to the sparge water. The acidulated malt is used to reach the desired mash pH; do not omit this ingredient unless you acidify your mash water. Do not add additional water salts to lower the pH; a minerally water character is inappropriate for this style.
Two or three days before brew day, make a 2-qt. (2-L) yeast starter, aerating the wort thoroughly (preferably with oxygen) before pitching the yeast. On brew day, mash in at 156 °F (69 °C) in 14 qts. (13 L) of water and hold this temperature until converted, 30 to 45 minutes. Pull a thick decoction of at least half the mash, then boil the decoction until it changes color and consistency, about 25 minutes. Stir the decoction frequently to avoid scorching. Return the decoction to the main mash and hold at 168 °F (76 °C) for mash out. Recirculate until clear, fly sparge with 168 °F (76 °C) water until 6.5 gallons (25 L) of wort is collected.
Boil the wort for 90 minutes, adding the hops at times indicated in the recipe. First wort hops are added to the kettle before the wort is run off. After adding the final hops when the heat is turned off, immediately begin chilling the wort. Chill to 43–45 °F (6–7 °C). Chilling to this low temperature may take two cooling stages or the use of an ice bath to reduce the temperature of the cooling water.
Oxygenate, then pitch the yeast starter. Allow fermentation temperature to rise to no more than 50 °F (10 °C) until desired final gravity (FG) is achieved. Then rack and slowly chill to lagering temperature. Lager for 4 to 6 weeks at 33 °F (1 °C). Prime and bottle condition, or keg and force carbonate to 2.4 volumes.
The original recipe used Best Malz for the base malt, a fully modified malt. If using an undermodified malt (such as Weyermann Floor-Malted Bohemian Pilsner malt), a true double decoction mash schedule can be used as described in the article. If using the Weyermann malt, you can also substitute the Weyermann Carabohemian® malt for the Caravienne. These products are malted specifically for making Czech-style beers. |

Notes: Seems like the current website vs. videos and old website information on this beer are somewhat in contention
Below seem to be the facts:
- 5% ABV
- Brewed with 3 malts - pale, crystal and amber (straight from bottle description)
- recipe seems to have changed no less than 3 times
- Website has stated First Gold Challenger and Fuggles hops - latest website also includes Pilgrim (20200822); the website current video the guy states 3 malts and 3 hops
- "brewed longer" implies long mash cycle
I credit the below links though I will make it my own:
https://www.colchesterhomebrew.co.uk/homebrewingandwinemakingblog/read_40351/abbot-ale-clone-recipe.html
The above link has a hopping schedule and notes based on multiple brews and experience I like.
https://brewgr.com/recipe/42295/abbot-ale-all-grain-strong-bitter-recipe
The above link has some very specific information quoted below:
"Key points gleaned from the Abbot Ale website: Water extracted from chalk wells. Mashed at 146F - 149F (on the low side). Mash and sparge takes 3-4 hours. 60 minute boil. Whirlpool hops BEFORE chilling. Fermented for longer. 5% ABV. Amber Mahogany color and a rich malty taste. Pale Malt, Amber Malt, Crystal. Targeting 13 SRM, and ~30 IBUs." |
