Notes: Original Gravity was 18.3 prior to dilution with the hop tea (about 0.8 gal) - so calculated about 15.3 = 1.0622
pitched yeast into aerator at 5pm on 3/14
made hop tea with 0.8 gal water with 1st dry hops at 11am on 3/15
also added 2oz maltodextrin and yeast nutrient to the boiling water (because I forgot in the boil!)
added hops to 185 deg water. instantly dropped to 178. let stand 2 minutes then started chilling
Fermentation started cool... 63 deg for first 4 days. Then put the heater on it and it maintained 72-74 deg for the remainder of fermentation |

Notes: a Session beer... drink a lot
Well, that was the original plan. This beer failed to make it - that is what I get for shipping yeast from California to Georgia in the middle of summer. Smelled amazing and was shaping up to be everything I wanted. Although, at 4.8%, I don't think I would call it a Session Beer. The grain bill was designed to impart as much complexity and flavor into the beer as possible without having a huge alcohol content. |

Notes: Budweiser is produced using barley malt, rice, water, hops and yeast. The brewing happens in seven steps: milling, mashing, straining, brew kettle, primary fermentation, beechwood lagering and finishing.[46] It is lagered with beechwood chips in the aging vessel. While beechwood chips are used in the maturation tank, there is little to no flavor contribution from the wood, mainly because they are boiled in sodium bicarbonate (baking soda) for seven hours for the very purpose of removing any flavor from the wood. Brew #1, everybody really loved it, trying another batch. I did use the Beach like the Wikipedia said to. Used about 1/2 pound of finished beach.
Brew #2, 11/8/2023, making 5 gallon batch. Hallertae Hops went bad, using 1oz US Saaz Alpha 6.5%. Will be using 1 pound of the finished beach.

Notes: Added 0.4 lbs of DME to 3.2 qt mash out/vorlauf water addition and allowed to recirculate prior to sparging. Hit pre-boil gravity of 1.038 in 4 gals of wort. When final volume topped up to 5.5 gallons, hit OG of 1.050.
Cofermenting with Fermentis Saflager 34/70 and Lallemand Nottingham High Performance Ale (1 packet each, hydrate each separately in 125 ml of water, added to 1.2 L starter with 150 g DME (+1/2 tsp Wyeast nutrient, 2 drops olive oil) three days before pitching for Saflager, and 2 days before pitching for Nottingham.
Fermentation starting at 50F, stepped up +1F every 12 hours until temperature reaches 60F, then +2F every 12 hours until fermentation complete (6-7 days total). Checked gravity (hit intended 1.008) and then cold crash to near freezing. Added 5.5 g of Knox gelatine to 300 ml of pre-boiled water, let bloom for 1 hour, and then heated to 150F in pot of water. Added to fermenter once cooled down; light stir in fermenter. |
