Notes: Yeast starter 2 days prior using 4oz DME and 1000mL water for 12 mins with 0.5 tsp yeast nutrient. Chill, pitch yeast, and aerate using stir plate.
On brew day:
Perform a step-mash using bottled water with the milled grains per the schedule. Mashout at 168F, rinse with sparge water, and top-off to 4.5 gals and bring to boil.
Add hops/extra per schedule (75 min boil).
Chill, xfer to 3gal carboy, pitch yeast, and ferment between 62-65F. After 3 days, switch from blowoff tube to airlock. After 7 days, add bourbon-soaked oak chips (4oz) for another 5-7 days (or until FG is reached).
Carbonate using syrup (maple or black walnut) to ~2 vols CO2 and bottle |

| Notes: Roast sunflower seeds at 450 °F (232 °C) for 15–20 minutes. Steep crushed grains at 152 °F (67 °C) for 60 minutes. Add dried malt extract and water to make 3 gallons (11 L) and boil wort for 70 minutes, adding hops at times indicated. Add liquid malt extract for final 15 minutes of the boil. Ferment at 66–70 °F (19–21 °C). Rack to secondary after 10 days. “Dry seed” the beer in secondary for 2 or 3 days. Force carbonate to 3.2 volumes of CO2. |

| Notes: Needed to use my almost too old Tropical IPA yeast and had no time for a brew, so I did a stovetop 5 liter batch. Maybe hit 2 gallons in the fermenter, and when I transferred it to the serving keg I poured in a 25 oz can of Budweiser to up the volume. Still about 5 liters in the final serving keg. The dry hop with 2 oz was very intense but it is a juice bomp. Zappa is very tropical. I would certainly scale this up and brew again. This yeast is sure the one to use as well. |
