| Notes: Steep Briess Caramel 60L for 20 minutes or until temperature reaches 170 degrees in 3 gallons of water. Bring to boil, remove from heat and add Gold Malt Extract and DME. Bring back up to boil and begin hop schedule: 1.5oz Centennial 60 min, 1.5oz Centennial 30 min, 1.5oz Cascade 15 min, 1.5oz Cascade flameout and steep for 5 minutes. Cool and rack to fermenter, topping off to 5.5 gallons. Rack to secondary and dry hop with 1.75oz Hellertau. |

Notes: 1. Prepare 6 L of water and heat to 67 C. Once ready add your steeping grains and mash for 1 hour (maintaining 65-67 C) Do this by placing a lid on the pot, at the end of the hour raise the temperature to 75 C and hold for 10 minutes. Then strain the liquid through a sieve into pot and boil for 30 minutes.
2. In a separate pot add 1 litre of water and bring to the boil (hold the boil for 30 minutes.
3. Add 25g of African Queen Hops to the water for the full 30 minute boil.
4. Add 20 g of the Mosaic hop after 20 minutes of boiling (10 minutes in the boil).
5. Strain the hop water though a sieve into the wort you produced from steeping the grains.
6. Add the contents of the Black Rock Pale Ale Can to your sanitised fermenter.
7. Add the wort produced from the steeped grains and the hop water to the fermenter.
8. Mix everything together well and then top up the fermenter with cold water to 20L, take a hydrometer reading at this point and record the figure for later.
10. Check the temperature is below 25 C, if so you can add the Verdant IPA yeast to the mixture.
11. Place the lid of the fermenter on firmly and insert the airlock using sanitiser or sterile water or vodka in the airlock.
12. On day 4 of fermentation add your remaining Mosaic and Arfican Queen hops to a sanitised hop sock and drop it into the fermenter.
13. After 7 days from the start of fermentation, check again with the hydrometer to establish if primary fermentation is complete, if you have the same reading for two days in a row primary fermentation should be complete. If so you can go ahead and bottle the batch.
14. Bottle as normal using your priming method of choice.

| Notes: The goal for this brew is to create a copycat Elvis Juice (Brewdog, Ellon, Scotland, UK), or at the very least, a medium ABV American IPA with heavy citrus notes, both in flavor and aroma. We will follow the Elvis Juice recipe from DIY Dog as close as we can but we’ll leave out the fruit/peel additions (to highlight the hop flavors/aromas on their own) and do partial mash instead of full grain because we don’t have a large enough mashing vessel. The switch to partial mash means that some of the grain in the original recipe will be replaced with a light malt extract. Assuming the malt extract is part of the base malts (Pale 2-row), we will use the same mass percentage of caramalt as the DIY dog recipe calls for (~16%). Hop schedule will be about the same as DIY dog - though they don't provide a fermentation timeline, we'll wait for fermentation to subside before dry hopping for 5 days. We'll also use Fermentis US-05 yeast instead of the WYeast 1056 (they're the same strain, 05 is just dry version), and directly pitch the yeast from the pack into the carboy, no starter. |

Notes: 10/4/2017: This is a very simple and cheap pale ale with a small boil for brewing demonstration at the Green Bay Rackers booth at the 2017 Northeast Wisconsin Craft Beer Show. It's made a simple specialty grain soak extract beer. Should be very flavorful without being filling.

Brew Schedule:
Heat 2.5 gallons of water to 160 degrees
Place specialty grains in grain bag and steep for 20 minutes
T20
Remove grains and begin heating to boil
Add ALL DME, 8oz Cane Sugar
Boil and break
Add .75oz Columbus Hop Pellets
T15
Add 1tsp Irish Moss
T15
Flameout, Add 1oz Mosaic Hop Pellets

10/6/2017: OG was 1.053 with 3.5 gallons of wort
Notes: This beer was SUPER easy to make, I could have knocked it out in less than two and a half hours had I not been talking with people and moving around the show. The ice bath in the tote worked well, I just stuffed it in there and left it stirring once and a while. Started at 5pm and got it in the fermenter and the yeast pitched by 8:30p. Didn't lose as much wort as planned from boil off, had to keep the pot partially covered to keep a strong boil on the induction cook top. It got the job done well enough though! I look forward to using this one for many more demos in the future!
10/12/2017: Took the first sample today. Fementation is practically complete and beer is beginning to clear. Seems to be turning out to be a nice flavorful dry pale ale. Dry hopped with one ounce of Simcoe hops, should add some nice aroma to the beer. FG looks like 1.005, that attenuation tho :) Looks like a nice 6.3% ABV, a little high but I don't mind. US-05 for me has been consistently hitting 1.008 and lower in most of my beers lately. Re-hydrating and pitching a large amount of this yeast seems to bump down the fg by a couple points more often then not. I'm very happy with this result! I could probably do with using a little less hops but it's still a bit early to tell.
10/15/2017: Moved to chamber to cold crash. Plan to bottle within the next couple days.
10/17/2017: Bottling day, FG is steady at 1.005. Bottled conditioned with a target of 2.4 volumes of C02. Used about 1.7oz corn sugar in about a cup of water for priming solution. Simcoe might be strange but it might be good! Bottled 29 12oz bottles. 43FC |
