| Notes: Brewed this twice. once with US 05 and once with Lallemand Voss Kveik. Both were kegged, carbonated and ready to drink in one week from brew day. Both were very pleasant and easy to drink. When served very cold it goes down like water with Just a hint of bitterness. Nice 1/4" head of foam with small bubbles when served at 6 to 8psi. I have had numerous requests to brew it again with the Kveik batch getting the most requests. |

Notes: This receip is a larger volume version of The Visitor II, 10gallo s fermented with US05@62f and 5 with mangrove Jack CA lager.
10/15—CA lager version keg kicked. It had shortest hop stand exposure. Still, yeast profile was more fruity than US05, despite identical (cool, ~17c) primary fermentation profile. This version would benefit from some character malts to make it a more flavorful lager instead of a more neutral cream ale/American lager grain bill in this batch. Just starting to sample longer hop stand US05 version. Very much on target so far.
10/25–US05 version with longer hopstand was about the best beer I’ve made and a great version of a (low corn) cream ale. Flavorful but very easy drinking. Low malt notes perfectly balanced with a bitterness that quickly dissipated. The short hopstand version didn’t have quite enough bitterness to balance as well. |

Notes: 5A. German Leichtbier
Overall Impression: A pale, highly-attenuated, light-bodied
German lager with lower alcohol and calories than normalstrength beers. Moderately bitter with noticeable malt and hop
flavors, the beer is still interesting to drink.
Aroma: Low to medium hop aroma, with a spicy, herbal, or
floral character. Low to medium-low grainy-sweet or slightly
crackery malt aroma. Clean fermentation profile.
Appearance: Straw to pale gold in color. Brilliant clarity.
Moderate white head with average to below average
persistence.
Flavor: Low to medium grainy-sweet malt flavor initially.
Medium hop bitterness. Low to medium hop flavor, with a
spicy, herbal, or floral quality. Clean fermentation character,
well-lagered. Dry finish with a light malty and hoppy aftertaste.
Mouthfeel: Light to very light body. Medium to high
carbonation. Smooth, well-attenuated.
Comments: Marketed primarily as a diet-oriented beer with
lower carbohydrates, alcohol, and calories. Pronounced
“LYESHT-beer.” May also be known as a Diat Pils or Helles,
this style is in the schankbier gravity class. Other variations of
Leicht class beers can be made from Weissbier, Kölsch, and
Altbier; those beers are best entered in the Mixed-Style Beer
category.
History: Traditional versions existed as drinks for physical
laborers in factories or fields, but modern versions are more
based on popular American products in the same class.
Characteristic Ingredients: Similar to a German Pils or
Helles, continental Pils malt, German lager yeast, Saazer-type
hops.
Style Comparison: Like a lower-alcohol, lighter-bodied,
slightly less aggressive German Pils or Helles.
Vital Statistics: OG: 1.026 – 1.034
IBUs: 15 – 28 FG: 1.006 – 1.010
SRM: 2 – 5 ABV: 2.4 – 3.6%

Notes: Brewed Jan 19th. Fermented at 49F for first four days -- vigorous fermentation was pushing beer out of airlock. Blow off tube applied. Activity slowed after fourth day. Allowed to free rise until 58F at day 6. Minimal additional airlock/blow off activity during that time.
Gravity reading taken Jan 24th -- 1.012 with signs of obvious fermentation (krausen). Bright yellow and opaque with yeast. No diacetyl noted during gravity reading but ++ sulfur present. Gravity sample tastes of deep bready malt. Very nice flavour.
Gravity reading taken Jan 29th -- 1.008 Beer has yeast rafts floating on top but beer is much clearer and no more signs of fermentation. No off flavours noted on sample. Strong aroma from the Spalt hop addition with a clean malt that ends dry. |
