Notes: Start fermentation at 62-64, let rise to 66 for first few days, then let rise to 68-70 to finish off.
To get experimental, I’m going to take one gallon of this and make a Chocolate Banana Peanut Butter Bourbon Weizenbock... infuse bourbon with cocoa nibs, banana (maybe, depends on how much flavor comes from yeast), PB2 peanut butter powder (trying to avoid oils from regular PB), half a vanilla bean, and maybe even a clove (again, depending on flavor from yeast), then add to one gallon jug for a couple weeks, or to taste at bottling. |

8 gallons of strike water @ 158.5 degrees F. Actual Mash temp = 153 degrees F. After 30 minutes, temp = 150 degrees F. After 60 minute mash, temp = 147 degrees F.
starting vol = 7.25 gallons after mash. SG = 12.5 Brix = 1.0505 g/L
Final volume = 5.5 gallons. 4.75 into carboy. OG = 1.059 g/L aka 14.5 Brix
On 10/7/2020 I raised temp to 70 plus/minus 3 degrees F.
On 10/8/2020 the Brix read 7.3, which after correction for EtOH is 1.012 g/L. Started lowering temp for clarity. 10 degrees a day until temp = 40 degrees F.
Kegged on 10/15/2020. Hydrometer gravity = 1.013 g/L (I used this FG). Only yielded about 4.25 to 4.5 gallons. I need to bump up mash water next time. |

Notes: Here is a 6 gallon recipe for you. This is the commercial recipe adapted to homebrew scale. Assuming 72% efficiency, boiloff rate of 10%:
10.75# Rahr Pale Ale malt 12 oz of Rahr White Wheat Malt 6 oz of Weyermann Vienna malt
Mash at 152 degrees F, vorlauf, lauter and sparge to yield ~6.8 gallons of wort at ~1.045
Boil for 75 minutes.
Hop additions are:
2 oz of Galaxy at 14.2% AA 20 min from end of boil (38 IBU) 3 oz of Galaxy at 14.2% AA at flame out (~10 IBU)
Fining agent of your choice when you normally add it
Let flameout hops steep for 30 minutes before cooling (simulated whirlpool hops). We get a large amount of utilization in our whirlpool, and this recipe is written assuming you will get ~10 IBUs from the flameout addition. If you choose to cool immediately after adding these hops, you'll need to add another 10 IBUs somewhere else.
Post boil vol ~6 gal at 1.051 OG
Pitch WLP090 and ferment at 68 degrees F for 7-8 days. Final gravity should be 1.008-1.009. Dry hop with 3 oz of Galaxy hops for 5-7 days.
Crash cool and filter or fine, keg or bottle as is appropriate for your process.
