10/21/22
rebrewing this for cashmere, turning down the gravity, doing a half RO solution plus minerals...should be good. need to check on yeast, this may get brewed on kviek and in a bucket
==============================
9/14/2022
beer came out great, belma hops are delicious. the FG was down to 1005 making the abv on the high side and the body kind of thin and even the color is pretty light. next time for pale ale, should add some crystal malt to give a little more depth in color and body. also consider mashing higher or not as long and maybe do mashout. i think current mash is creating sugars that are a little too fermentable?
==============================
9/1/2022
brew night last night. the BIAB went well, no sparge. the volume came out exactly as BF predicted, although it boiled down from 6.5 to under 5 gallons in an hour, so need to account for that next time. it was orignally 1070 OG, topped up to 5 gallons for 1060, then topped up more to about 5.5 or maybe 5.66 for 1055. (did not want to end up at 1060, too strong for this beer and would require more hops for balance, at that point making it an ipa)
decided on a whim to add a little more bittering hops to end up at the upper range of IBU. my lighter beers using tap water in general come out on the sweet side but most times that is without water adjustments.
last minute decided to switch to us05 instead of voss
==============================
8/31/2022
starting up another pale. the last one i vaguely remember coming out bad, cant remember why though. maybe somethign to do with yeast, not sure. but the base recipe is fine...
the water adjustments are as good as its gonna get on tap water. this beer would probably be much better with RO water and more precise adjustments...
changing for belma hops this time and adjusting efficiency for GF, i think i will do a true BIAB style mash today. so adding a little more to malt bill just in case
==============================
3/14/2022
repurposing for huell melon pale ale. with updated water profile results from ward, my water profile for this beer now looks a bit out of wack by the numbers but it worked well for the last beer so im just going to roll with it for now until i have time to figure out how to fix it.
==============================
2/8/2022
This lutra is taking forever. Tonight its 10 brix which is like 1026 and 4.6%. Tastes sweet. Still bubbling smh
==============================
2/3/2022
measured 1060 OG i think i got more than 5.5 gallons. i accidentally grained into my entire volume of hot liquor. after mash i sparged a little with about 1.5 or 2 gallons of cold water. pre boil vol was like 8.5 gallons
==============================
2/1/2022
revamping summer madness for this beer which will feature mighty axe julius hops instead of cascade. going with lutra again.
==============================
9/13/2021
last week measured 1013 FG for 4.8%abv. but it does not taste that light. nice body and carapils flavor, also the dry hop was faint but nice. could maybe use more dry hop but in the interest of keeping it light and cheap and not-session-ipa, i think its perfect just like this.
==============================
9/1/2021 - brew day
Not too confident on 70% eff dropping to 60, bumping 2row from 975 to 1150. Should do better with water but i think I'm gonna use tap and leave out acid
==============================
7/22/2021
Just had Port City Essential Pale Ale recently which has to be the tastiest pale ale on the planet...at very least it is one of my absolute favorite beers. this time it strikes me that it has a lot of not bitter hop flavor and decent backbone while still being 5.5%.
Their website says 35ibu so im knocking down the warrior contribution from 0.75 to 0.4oz. Adding more cascade in the flameout and dry hop (1oz-->2oz)
consider going 3oz in dry hop. maybe some pilsner malt or something else to add more malt backbone. vienna? but the carapils might be fine. at least to start.
need to review water. would like to use tap and adjust but unsure rn, been having off mash pH readings and low efficiency.

Notes: https://byo.com/article/california-common-style-profile-2/
The only specialty malt you really need for California common is crystal malt. You want to build a gentle but clearly evident caramel flavor and color. Use a mid-color crystal malt between 30 and 70 °L for up to 10% of the grist. If you want to develop more of a toasty/biscuity character, you can add a small percentage (< 5%) of toasted malts, such as Victory, biscuit or even pale chocolate. Pale chocolate (200–250 °L) imparts a more intense dark toasty note, which I like in this beer. If you use pale chocolate, keep it to a minor addition, around 1%. Stay away from malts darker than pale chocolate or use them in only the tiniest of amounts for color correction, not flavor. You do not want a roast character to come through in the beer. In general, keep the total of all specialty grain additions to less than 15%.
While there are some examples out there that use other hop varieties, making a beer similar to Anchor Steam requires Northern Brewer hops. If you want to experiment, avoid highly citrusy or fruity hops as they will overshadow the fermentation character, which is so important to this style. Finding other hop varieties that fit a judge’s vision of California common can be tough. You will want to look for varieties that give a woody, earthy, or perhaps a spicy hop character. I have always thought Spalt would work well, with its interesting spicy and somewhat rustic character. You might also experiment with Cluster, Nugget, Perle, Santiam, Tettnanger or Liberty. Historically the hops would most likely have been California-grown Cluster hops.
When it comes to hop quantities, go bold on the flavor and aroma additions. It shouldn’t be overwhelming and turn into an IPA, but the hop character, along with hop bittering, should be full and readily apparent to the drinker. For flavor and aroma, add two or three later additions around 1⁄4 to 1/3 oz. per gallon (1 to 3 g/L). You can go lighter or heavier, just keep in mind the overall character you are trying to build. Target a bitterness-to-starting gravity ratio (IBU divided by OG) of 0.6 to 1.0.
A fermentation temperature of 62 to 64°F (17 to 18°C) gives the best result. Follow that up with a month of cold conditioning and carbonation approaching three volumes and it will help you come a little closer to matching that wonderful Anchor classic. |
