Notes: Brewed 5/30/21. Mash in w/12.5 L Boulder H20, 3 g CaCl2. pH 5.7. Hold at 112 F for 15 minutes. Add acid malt, 0.5 ml lactic acid, pH 5.3. Heat to 146 F, pull decoction. Return decoction at 15 minutes prior to end of one hour hold, temp 151 F. Raise to 166 F for mashout. Sparge with water, added 3 ml lactic acid (pH 5.6, a little too much - 2.5 ml would have been just about right). pH of wort 5.27. Racked to ket 06/16/21.
Brewed again on 07/22/21, same recipe, but used 1/2 oz Saphir and 1/2 oz German Perle (7.2 alpha). Ferment at 62 F. Gravity 1.049 |

Notes: - Mash in with 30 gallons of water at 142* strike temp.
- Mash at 131-133* for 10 minutes
- Raise to 144-145*, hold for 30 mins
- Take 1/3 of mash and put in kettle - bring up to 166 for 40 minutes, then boil for 15 mins.
- Add back decocted mash
- Raise whole mash to 166*, hold for 10 mins
- Raise to 170*, hold for 10 mins
- Run off
4oz of Hallertau at 5 mins left in the boil. |

| Notes: Trying to get the subtlety of a real British pub ale. 60 minute boil will maintain malty notes without caramelizing the sugars....easy on the hops, as well....I have realized that these beers are like MG's. Quick to build, fast delivery to the market....not a lot of frills...and low alcohol so more than one or two can be had without adverse effects....I might leave out the Carapils and up the Maris by a pound next time.... |
