Grain Bill:
11 lbs (5 kg) Pale Malt (2-row): This will provide the base and backbone of your beer.
1 lb (0.45 kg) Munich Malt: Adds a touch of malty sweetness and complexity.
0.5 lb (0.23 kg) Caramel/Crystal Malt (40L): Contributes to body and a slight caramel flavor.
0.5 lb (0.23 kg) Vienna Malt: Enhances the malt profile with a slight toasty character.
Hop Schedule:
Bittering (60 minutes):
0.5 oz (14 g) Magnum: A high-alpha hop ideal for clean, smooth bitterness.
Flavor (20 minutes):
0.5 oz (14 g) Chinook: Adds piney, resinous, and slight spicy flavors.
Aroma (10 minutes):
0.5 oz (14 g) Centennial: Known for its citrusy and floral notes, it complements the other hops well.

Yeast:
American Ale Yeast (Wyeast 1056, White Labs WLP001, or SafAle US-05): A clean, neutral yeast that allows the hop flavors to shine through.
Brewing Process:
Mash:
Mash the grains at 152°F (67°C) for 60 minutes to achieve a balanced fermentability, which will provide a good body while allowing the hops to be the star.
Boil:
Boil for 60 minutes, following the hop schedule above.
Whirlpool:
After boiling, chill the wort down to 170°F (77°C), then add the whirlpool hops and steep for 20 minutes. This helps to extract flavor and aroma without too much bitterness.
Fermentation:
Chill the wort to around 68°F (20°C), pitch the yeast, and ferment at 67-70°F (19-21°C) for about 2 weeks or until fermentation is complete.
Dry Hopping:
After primary fermentation is complete, add the dry hops and let them steep in the beer for 5-7 days.
Packaging:
After dry hopping, cold crash the beer for 2-3 days to help clarify it, then bottle or keg the beer, carbonate to about 2.5 volumes of CO2, and enjoy!
Tasting Notes:
Expect a beer with a golden color and a strong hop aroma featuring a mix of pine, citrus, tropical fruit, and subtle herbal notes. The bitterness will be assertive but balanced by a clean malt backbone, making this IPA a crisp, refreshing, and flavorful brew that showcases the unique qualities of each hop.

Notes: 1day before brew day, prepare Starter : 230g CBW Sparkling Amber dry malt extract /2L water + 2g Yeast Nutriments. Cooled (30C) and pouren in a 5L Fermonster, add 1x Sarfale US-05 , stay and shake 24hrs…
Heat 4.5 gallons (17 L) of water to 164-170 °F (73 °C in the mash tun / 77 °C in the boiler before the transfert).
Stir in crushed grains and mash at 153 °F (67 °C) for 60 minutes. (66.5 °C at the end)
Add boiled water to raise mash temperature to 168 °F (76 °C) and hold for 5 minutes.
Vorlauf with water at 190°F (Recirculate wort) for 20 minutes at a rate of approximately 0.5 gallons (1.9 L) per 5 minutes.
Run off wort and begin sparging when liquid level is approximately 1 in. (2.5 cm) above grain bed. (5.15 gal collected)
Sparge water should be hot enough to keep upper part of grain bed at 170 °F (77 °C). (Total 7.23 gal collected)
Collect 7,5 gallons of wort over ~90 minutes (about 1,25 gallon every 15 minutes), and boil wort for 75 mins.
Add hops (at 60 / 15 / 0 min) , 15g yeast nutriments (at 15 min) and 15g Irish moss (at 10min) . Cut the fire and prepare the next step. ( during this time This will let the trub and hop debris settle)
Cool wort to 70 °F (21 °C) with a boiling water sterilized counter-flow chiller and direct the chilled wort to a sanitized fermentation bucket, target : 5.8 Gal (22 L) To the fermenter. Take a sample to measure post-boil OG !!
Racked to fermenter bucket, aerate well and pitch sediment from r’the previously prepared 2L yeast starter ( Starter @ +-1.040 O.G (230g DME malt extract in 2000ml water aerated + a pinch (2g) yeast nutriments and shake during 12-24H, stand for another 24H @18-21 Celsius and chilled before brew time) (B plan is rehydrated dried yeast).

| Notes: Cooled to 70° then pitched two packets of dry S-23 yeast. Set kegerator to 50° for two days then 54° fermentation slowed so I gradually raised temperature to 64°. Gravity reads 1.024 after 9 days. Raising temp to 69° and waiting a few more days. |

Notes: Hops from my dad’s garden on the Western Slope of Colorado. A classic pale ale recipe (very similiar to Sierra Nevada Pale Ale or Anchor Liberty Pale Ale) but with a darker crystal (80L) for more raisin like quality in the malt.
Used Denver Municipal water (Uptown) and adjusted with 5 g of Gypsum and 4.5 g of Calcium Chloride. Achieved a 5.2 pH during the mash (which equated to a 90% effeciency).
Effeciency was so good that I adjusted the recipe to be an American IPA rather than a Pale Ale. |
