Notes: This is similar to an 1847 recipe from the William T Younger Brewery in Scotland. I’m using 8 pounds of malt instead of 7.5, and the bittering is the same at 35 IBU. SRM of 4 is also the same. I likely won’t achieve a pitch temperature of 58° F, however I will try to keep the fermentation below 68° F.
