-Was expecting pre boil gr of 1046 at 80% but got 1041, so boiled for 90 min adding first hops at 30 minutes in. Also, think I used right amount of malt, but mash seemed thin and beer in kettle very light, almost as if I had forgotten the vienna, which I don't think I did. Odd.
- Boiling for 90 min not necessary as got 1054 and 24.5 litres. Not sure what i was worrying about as everything finished fine. Accedently set vol too high so got 60 IBU rahter than 55.
- Cold crashed on Friday for 2 days at 1-3c and just put sanitised foil over hole.
- Sunday 12.12.20. day 14 kegged. FG 1010, so 5.8%. Tastes very promising. The biggest hop aroma and flavour of any beer, bitter but not massively so, no off flavors noted. More clear in tube than expected but hazy in glass. Kegged and bottle conditioned 6 with .5 ts sugar in bucket with heat belt.
TASTING: FUCK OFF GOOD. This is the first really great NEIPA I've made. 5 days in the keg and nearly fully carbed. Not opaque but very hazy, Huge hop aroma and flavour, very fruity and clean with no off flavors at all. 320gr is brilliant and don't go lower than this on a NEIPA or a westcoast. Ther eis no secreat - you need a shit load of hops to make a craft beer. The 60 IBU is also fine really, so I'm not sure I want to go below 50. Used flaked malted oats and crushed wheat from Brew UK, hops from Get er brewed, Vienna also from Get er brewed. Mouth feel not that soft and not opaque, but will be interesting to compare this to 78 which used a lot more oats and also flaked wheat.
TASTING 2: fUCK OFF GOOD AND BEST neipa EVER. See development note for more, but this is clean, very hoppy but not too much, and the 5.8% and 23% Vienna give this pleanty of body. All of your beers need lots of hops.
TASTING 3: wHAT THE FUCK. This if the bottle conditioned, 1 week in heat and 3 weeks total and it's shit. Cleared but it juts doesnt tast nice. An argument for bottle ondiioning just not working for NEIPA. Wierd. down the drain. |

METHOD:
Mill the grains and dough-in targeting a mash of around 3 Litres of water to 1 Kg of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 67 °C (152 °F).
Hold the mash at 67 °C ( 152 °F ) until enzymatic conversion is complete.
Add first wort hop addition.
Infuse the mash with near boiling water while stirring or with a recirculating mash system raise the temperature to mash out at 76 °C (168 °F). Mash out for 10 minutes.
Fly sparge slowly with 12 Litres of 77 °C (170 °F ) water, collecting wort until the pre-boil kettle volume is around 28.5 L (6.5 gallons).
The total boil time will be 60-90 minutes. Do not add Deltafloc or Irish Moss.
At flameout, wait until wort cools to 82°C (180 °F ) to avoid volatizing hop oils. Set time for 40 mins and add first hop stand addition (10g each hop).
After 20 mins add the second hop stand additions (20g each hop).
After the total hop stand of 40 minutes, chill wort to 19°C (67 °F ), decant starter or open Gold Pitch and pitch Yeast and aerate.
Over the course of the two-week fermentation, ramp the temperature up to 23°C (73 °F ) to ensure full attenuation.
On approximately Day 5 of fermentation when attenuation has reached about 80 percent, add the first dry hop addition.
Wait 5 days, then remove the first dry hop addition and add the second addition of dry hops and dry hop for another 5 days.
When finished, carbonate the beer to approximately 2.5 volumes (5 g/L) of CO2 (or add 125g of table sugar or 180g of Light Dried Malt Extract if bottling) and drink fresh. Prost! |

Notes: Mash start 1020 at 66/67C in 25L water treated with 1tsp Epsom and 1tsp Gypsum.
Start recirculation at 1120. At 1130 and 1135 looks to be running pretty clear. 64/65C at 1140. HLT Temp 73C.
Start pump to kettle at 1145. Fire up gas at 1155 with 20L. 1210 35L at 75C using 25L sparge. 1215 40L collected using 35L sparge Temp 80C. Boil starting 1240. Good rolling boil at 1242. Add 25 gms Pacific Gem in spider in at 1240. Cooling coil in at 1340.
Add 25gms Nelson Sauvin at1400 and another 25gms Nelson Sauvin at 1405 - both late additions into spider.
Flame out 1410. Start cooling with water coil and 2 fans. 86C at 1420. Add another 50gms Nelson Sauvin at 75C at 1428. 55C at 1440. 35C at 1455. 30C at 1502. 20C at 1520 water cooling off.
44/45L Total after boil with Coil in ( unsure coil displacement?? ).
Wort fairly murky not a great cold break?? Delicious taste with sweetness and bitterness both noticeable/ balanced.
OG 1054 at 21C.
Start runoff to F1 at 1530. Collect 20L
Start runoff to F2 at 1615. Collect
F1 Pitch S04 ( ex 39 and 40, collected 20/7 from 2 sachets ) at 1720.
F2 Pitch US05 ( ex 40, collected 20/7 from 2 sachets ) at 1720.
Wednesday 5/8 0830 both brews bubbling. F2 ( 22C ) quite vigorously and F1( 20.5C ) a little slower.
Thursday 6/8 both still bubbling away nicely F1 a little more active than F2 now average every 1 second. Temp in both fermenters up around 23/24 drop fridge temp to 17C.
F1 tasting good, slightly forward/ astringent/ viney? taste. F2 tasting much smoother/ balanced. Both still yeast active and cloudy in the glass. Midday temp F1 - 23C. F2 - 21C.
Sunday 9/8 F1 now seems way smoother, lovely big round luscious balanced flavour - clarity pretty good? Gravity 1016. Lift temp to 19C.
F2 a little hazy still with good round flavour a little more forward of the mouth and slightly drier. Gravity 1012..
Monday 10/8 Rack F2 into MJ Fermenter with 100gms Nelson Sauvin for dry hop and back into fridge at 18C. Salvage yeast collect 400-500ml.
Monday 10/8 Start chilling F1 at 5C.
Friday 14/8 at 1500 Rack F1 into Keg 3. Collect 18L? Finish Gravity 1016at 4C = 1015 - 1055-1015 = 1040 = 5.25% and 72% attenuation. Good all round mouthfeel, smooth with a little bitterness on tongue. Go 41F1.
Friday 14/8 at 1600 F2 tasting good with fruity lolly hop forward taste. Drop temp to 4C and stir in hops sitting on top.
Monday 17/8 at 1040 Rack MJ into Keg 4. Collect 18.5L? Still slight lolly taste ( US05?? ) but more hop forward.
