Notes: 1. Mash grains and Vorlauf.
2. Sparge and rest for 10 m in and vorlauf.
3. Start 60 minute boil.
4. Add hop additions according to their schedule
5. Cool wort to 65 degF, aerate for 30 min, gravit y reading, and pitch yeast.
7. Ferment till finished about 2 weeks, add dry-hops according to their schedule and jalapeno for 7 days.
8. Cold crash in for week 4.
9. Transfer to keg and force carbonate. |

Notes: Mash at 153 °F (67 °C) for 60 minutes. Ferment at 68 °F (20 °C) with for 7-14 days primary. Transfer to secondary for 7-14 days to clarify. Use a yeast starter made from a bottle of Bell's Oberon if available instead of WLP001.
Build up a starter of yeast from oberon dregs instead of California if available. Use only 1 oz coriander then. |

After 1 week, rack to secondary. Add raspberries in 1/2 quarts water and heat at 140F for 30'. Let it cool and add to the carboy. Allow to ferment 1 more week. Rack again and let it ferment for 2 weeks. |
