Notes: Fell upon a classic IPA with perfect grain bill and perfect hop recipe...again I closed my eyes and brewed ... using the classic ingredients.....my yeast bill contained an aggressive sacch, an Omega brett and slurry from a prior belgian I brewed....
Drinking now...extra-celestial....light body...perfect grain flavor...hops come on like a ride in a convertible on the Interstate 80 just west of Laramie, Wyoming! |

Notes: Wyeast 3787 (Trappist High Gravity), White Labs WLP530 (Abbey Ale), or Lallemand Abbaye Ale yeast (2 qt./~2 L yeast starter).
Mash at 150 °F (66 °C) for 60 minutes. Boil for 90 minutes adding hops at times indicated. At the end of the boil, turn off heat and add the sugar and spices directly to the brewpot. Give a big stir to create a whirlpool and let settle for 20 minutes. Chill wort to yeast pitching temperature and rack to fermenter. Ferment at 65 °F (18 °C). Dry hop for 5 days just before bottling or kegging. |

In protest against the potential withdrawal of the USA from the Paris agreement, we brewed a saison (which ferments at high temperatures) with melted ice caps (glacier water) and cloudberries (an Arctic berry). So your homebrew shop of choice may not stock all the ingredients here! You can buy cloudberry jam and add that instead. The pectin in the jam is not ideal and will form a haze but that can be forgiven in a saison.
