10ml lactic & 12 AMS & 1.5 campden tablets added the night before
Measured Alkalinity = 39ppm so added 1ml more of lactic acid
Mashed using Madeinead schedule, stirred once during used large malt pipe.
Pre boil gravity 1.036 so added 100g sugar to boil.
post boil gravity 1.041 so a bit low.
32litres of wort in fermenter 21l in one and 11l in another
(added 70g sugar to 21 and 30g to 11)

Notes: The efficiency of this beer was higher than expected. I added the 2 row and barley to cold water and slowly raised the temp to 140df over 10 hours. Black grains added at last hour of mash. I assume the extended mash time and low mash temp are the reasons for higher efficiency.

Notes: - Low ABV is desirable for malty German styles. It helps create a smoother finish and creamier mouthfeel.
- I wouldn’t recommend going about this recipe w/o using Rice Hulls. The higher than usual ratio of wheat to barley here will result in a stuck sparge without a doubt.
- If the temp crosses over 19c you’ll get too much phenols - banana and cloves. Not desirable in this recipe.
- Other than that, the recipe makes a very delicious malty, fruity, hazy wheat beer. Hope you guys enjoy making it as much as I did.
