Notes: Version #1Started Ferm at 62ºF, rehydrated Safale 04 in Santo Domingo tap water, activity at about 15 hours. Dry hopped 5 days after pitch, reduced airlock activity. Bottled exactly 5 gallons, primed with 5oz corn sugar. Brewed 3/13/21, bottled 3/31/21.
After about 2 weeks in bottle-- great-- lots of foam on the pour but fine foam and Belgian lacing. Great aroma-- maybe the Vic Secret? Would repeat recipe little less carbonation maybe. (Bottle conditions at about 82º F Santo Domingo.

| Notes: Pretty close. The roasted barley ages really nicely giving lots of chocolate and roasty flavors. Maybe next time add some Special B for additional depth of flavor. And maybe reduce roasted barley by an ounce for some better balance. |

2/5/18:
Re-hydrated yeast, but forgot to pitch.
2/6/18:
Pitched yeast around 4pm.
2/7/18:
Some bubble action at 6am. Bubbles out the top of the blow off by 3pm. I was worried leaving re-hydrated yeast for 24hrs was gonna be a problem. Apparently not.
2/18/18:
Kegged and set to 30psi for a few days to force carb. FG = 1.018, adjusted attenuation to 70%. ABV = 5.8%
2/27/18:
Dry hopped 2oz East Kent Goldings, 2oz Simcoe.
