Starting point was John Mallett of Bell's creation at the Craft Beer & Brewing Brewers Retreat
Modified to include:
* malt smoked with cherry wood
* different hops
* different yeast
* fermenting on top of Montmorency dried cherries instead of adding concentrated cherry juice at flameout
* Ideally: Steep equal weights of minced dried cherries and cocoa nibs in an equal weight of Black Forest Kirschwasser Brandy for ten days prior to adding the entire mess to primary fermenter on day two after pitching yeast

Notes: Chill to 35 degrees Celsius and leave in the garden open overnight. 2014-11-24.
Sample taken 9/12/14 - gravity 1.022: Dry, slightly tart, pineapple and passionfruit. Probably Brett. Brown rafts atop of a bubbly pellicle.
04/01/15 - Gravity at 1.010 PH at 4.0 Smell of brett, sewer, dirty pipes etc with some barnyard coming through. Brown rafts floating on top of the surface - no bubbly pellicle as before. |

Notes: Due to a bad thermometer, I cooled the finished wort to 45-50 degrees F. I moved the wort to a 6 gal carboy and put a ferm-wrap on it before pitching the yeast. At 57F, I aerated with oxygen for about 1 minute and pitched a mason jar of Vermont IPA yeast that had been siting in a fridge for about 1 month. I let the yeast sit out the day before brew day. There was about a finger nail's worth of yeast sediment on the bottom of the jar. I did not decant nor make a starter for this beer, though I probably should have.
I pulled about 5.5 gal of wort into the fermentor with about 0.25 gal of wort left on the bottom of the fermentor, which I used to grow up a different yeast for a different beer. I got an OG reading of 1.058. |
