Notes: BIAB; Single infusion rest at 150 F for 60-75 min. Remove bag, squeeze, then dunk sparge into 1.475 gal water at 170 in 3 gal kettle. Rest for 10 min, then remove bag, squeeze, then add these second runnings back to first runnings in 5 gal kettle and fire up to a 120 minute boil. Add hops as noted (can sub any noble hops for the Nobility). Remove some wort into small saucepan and dissolve molasses in it, then add back into boil around 10 minute mark. If your gravity is lower than expected, can add either more molasses, or DME or table sugar.
After about 0.47 gal absorption to grain, should have preboil volume of 4.0 gal; after 0.6 gal boil-off rate for 2 hrs, should have 2.8 gal into fermentor. After about 0.05 gal absorption to hops, and 0.25 gal to trub, should have 2.5 gal final beer to keg or bottle (use fresh yeast if bottling for high abv and age after lagering).
Ferment at 50 F for two weeks, then slowly raise to 60 for a Diacetyl rest for another week or two. Lager for 2-4 months, and age this one to get better in 8-12 months. |

Keep your mash water in the 154-55 degree range, use a clean american ale yeast.
Bittering addition should be around 20IBU (just use a high alpha variety)
30 minute addition of Centennial with about 25IBU
and then do about .2# per gallon in whirlpool of centennial. Dry hop with centennial at about .65# per gallon.
That should get you pretty close or at least an approximation. |

Notes: When you wake up in a haze after sleeping off that apartment complex pool party in your racing car bed, your singing career is a bust, and you can't draw dignity because your ex took it, you just want something simple and satisfying to forget it all. Well, grab a Red, 'cause the beauty of this one is its all-extract, single hop profile simplicity. 9 pounds of gold and Breiss dark quality malts deliver the smile that comes with your ex using a crudely drawn door. Then, cryogenically conditioned Centennial hops are with you the whole way. As the 60 minute boil begins, the first dose delivers all the bitterness of coming home to a sink-thawed hot dog. Missed OG. Came in at 1.081. Let's see what FG looks like.
Took about 5-10 mins to cool wort.
Had to move to another fermenter when I noticed the spigot seal had a slight leak on the first one. Wort was exposed for less than a minute during transfer.
Secondary ferment in glass carboy at 2 weeks. Thick layer of sludge in primary. Gravity at secondary: 1.021.
Bottling on 2 Oct. Another thick sludge layer in carboy. Final gravity was 1.021. OG and FG values missed targets but by equal amounts, ABV on target at 7.8%.
Color is a little dark for an IPA, at least compared to the red I put it next to. Not as dark as a stout so perfect.
Tasting prior to conditioning: pretty bitter. Might try to find different malts to counteract, or reduce the bittering hops to 0.5 oz next time. |
